I've used the dry enzyme once in a Corona clone I made last year....I can't recommend it highly enough. Especially if you want a light, crisp, refreshing lager on a hot summer's day!!!
I've got my second enzyme brew on the go at the moment...an Asahi SuperDry clone!!

I made a two-tin Coopers Dark ale....added nothing but water (up to 23 lt)and the supplied yeast. I was warned on these forums that it would be too bitter....and for the first 3-6 months it was, being almost undrinkable. But since that time the beer has improved massively to the point where it is ...

That's good info guys...thanks!! I was concerned about the bitterness considering both tins are already hopped. I might add some light dry malt as an experiment anyway...should smooth it out a little bit?? Maybe make it up to 25 litres?? I still open to suggestions....or maybe I should just make 2 ...

2 Cans of Coopers Dark Ale
Just looking for some feedback... I bought 2 cans of Coopers Dark Ale (for $5.00ea at the local mini-supermarket that is not carrying homebrew lines anymore!)
I was going to put them both in with some lager yeasts I have. Maybe only make it up to 22 litres.
Do I need to add any more fermentables ...

Ginger Beer query
I've read a few threads where people are making up ginger beer (and cider) kits and can't get by taste of the artificial sweetener...and this puts me off even trying.
So I was wondering whether or not using the "Buderim Ginger Refresher" (a type of cordial)product might work??
It comes in a 750ml ...

I'd say CUB markets Crownies a lot better than we do our own brews....advertising is powerful (some say it "brainwashes!!)...makes us all believe what THEY want us too!!! (If Human Faeces were advertised as being good for you, guaranteed someone out there would rush out and buy some!!)

The Breweries of Australia - A History
Hi Everyone,
At the risk of being shouted down...I just thought I'd let everyone know I'm listing on E-bay the book "The Breweries of Australia - A History" - by Keith M. Deutsher (1999). It provides a very detailed account of almost every brewery in Australia's history...no matter how obscure ...
