I've used the dry enzyme once in a Corona clone I made last year....I can't recommend it highly enough. Especially if you want a light, crisp, refreshing lager on a hot summer's day!!!
I've got my second enzyme brew on the go at the moment...an Asahi SuperDry clone!!

I have made this berew quite a few times and rate it as highly recommended.
The best brew was the kit, 1 kilo of dark malt and 500gm of yellow box honey.
This brew was rated as being a strong 9 out ten by a number of dark alke drinkers, so give it a go

Just a follow up on this thread.....
I cracked the first bottle last night and it was more than acceptable!!! The bitterness made it more stout-like and it lingered in your mouth long afterwards.
I expect this to mellow further with more bottle-time....straight out of the fermenter it was almost ...

That's good info guys...thanks!! I was concerned about the bitterness considering both tins are already hopped. I might add some light dry malt as an experiment anyway...should smooth it out a little bit?? Maybe make it up to 25 litres?? I still open to suggestions....or maybe I should just make 2 ...

2 Cans of Coopers Dark Ale

Just looking for some feedback... I bought 2 cans of Coopers Dark Ale (for $5.00ea at the local mini-supermarket that is not carrying homebrew lines anymore!)
I was going to put them both in with some lager yeasts I have. Maybe only make it up to 22 litres.
Do I need to add any more fermentables ...

On a very similar topic...
I have a spare lager yeast lying about not doing very much - can you use this with a Ginger beer kit? I don't have a heater and it's quite cold in Victoria at the moment....will it work...will it have an affect on the taste?

I added 630gms of Golden syrup to a Coopers Stout kit along with a bag of Brew Enhancer 2. Made it up to 19lts and it is absolutely sensational!! (And about 8.6% alc) It adds a flavour that's hard to describe...bit burnt...bit bitter....but whatever it is you want more of it!!

Ginger Beer query

I've read a few threads where people are making up ginger beer (and cider) kits and can't get by taste of the artificial sweetener...and this puts me off even trying.
So I was wondering whether or not using the "Buderim Ginger Refresher" (a type of cordial)product might work??
It comes in a 750ml ...

It is a new (old) product called VB "Pale Ale" and it was released to commemorate 100 (or 150??) years of brewing by Victoria Brewery. Based on some long lost original recipe that they dug up. They had a story about it in the "Eye" section of the Herald Sun this week.

I'd say CUB markets Crownies a lot better than we do our own brews....advertising is powerful (some say it "brainwashes!!)...makes us all believe what THEY want us too!!! (If Human Faeces were advertised as being good for you, guaranteed someone out there would rush out and buy some!!)

You shouldn't need the heater at all really...depending on where you are. In the fementation process yeast generates it's own heat....you may still need to manage the temperature depending on where you brew (ie uninsulated garage, under the house etc.)...on a cool night you could use the ...
