Re: How to carbonate kegs
I use the shake, rattle and roll method and can be pouring a beer within 5 minutes of filling the keg. Can be a bit of a trial-and-error deal to work out for how long at what pressure gets you an ideal carbonation level but if you've got taps with flow regulators (ie. Celli's or similar) then this ...

Re: Pure randomness
It's a strange feeling to be cut off by fire. Usually power is the first thing to go out here on a windy day (i.e. grand final day), but today power yes, road no. I'm now marooned on an island in the several fires that are running out of control in my local area. Not cool.

Re: Boiling kits and malts.
With kits-n-bits or extract brewing, you only really need to boil for as long as your first hop addition needs. If you have a 60 minute addition then obviously boil for the hour but if you were only doing a 10 minute addition, say, then you'd be fine to turn off the heat after 10 minutes.

Re: Boiling kits and malts.
Going to disagree with Paul a little here and say that if you are steeping grain then it's most-likely going to be spec-malt so doesn't need to be steeped for an hour. 15-20 minutes is fine.
Also, while sterilising the runnings by boiling is ideal, in my kits-n-bits days, I used to just steep for ...

Re: Pure randomness
I just went to Dan Murphys and walked out with a bottle of wine and no beer. There is a first time for everything!
Were hell a place, it could just have frozen over.
Picked up 2 x 1L cans of DAB at Dan's last week that each came with a 1L stein. Reckon I'm going to grab 2 more tonight on my way ...

I'd throw some crystal in but then adjust the IBU a touch higher to compensate. MGSA could do with a bit more IBU from where I'm standing, anyway.

We went on a winery tour the other weekend to the Yarra Valley near Melbourne and had lunch at Fergusson Winery. They may not have the world's worst beer list, given the presence of Hargreaves Hill Pale Ale, but it sure is weird.

Quadrupel! Get out of town.
Didn't know there was such a thing. Please post some notes. Please. :)~
Pretty sure it would read something like:
No carbonation or head to speak of.
Aroma of burnt inverse sugar.
Mouthfeel: has the viscosity of engine oil.
Tastes of maple syrup ...

Lost about 17kg since Christmas. I packed on heaps of weight in the past 3 or 4 years so am trimming it back now.

Re: dexrose or sugar
I keg so never have to mess around with carbonation in bottles, but I've always found that ginger beer takes longer to ferment than other brews. Might suggest that it was probably a matter of leaving them longer before fridging them to allow the secondary fermentation the time it needed.

If you have a coupler then you have different kegs than I. I have Cornelius kegs that have separate posts for gas in and beer out.
But go to the basics; your regulator is properly connected to the gas line and your coupler is properly connected to the beer line?
