I've brewed with an ale yeast up to about 22 degrees and it turned out fine but I wouldn't want to go any higher than that.
As svyturys said, don't be in a hurry to bottle. I don't worry about taking gravity reading but I always leave the brew in the fermenter for a minimum of 12 days before ...

I've just brewed an experiment.

Tin of Cascade Lager
400g honey
150ml lime juice
1 pk Coopers BE2
1 pk Hallatau hop pellets
safale yeast


I'll be interested to see how it turns out.


Yesterday I bottled a batch of Cascade Pale ale and a batch of Brewcraft Cream Ale.

I've got a mate that really appreciates my homebrew so he normally ends up with about a third of what I brew. I also find that I brew in spurts, build up a fair stock and then stop for a while. I haven't brewed for a while but I've now got both my fermenters going (Irish Cream Ale and Pale Ale).

I use honey in a few different brews. I brew a honey wheat beer for the hotter months and a honey porter for the cooler months.
I'm thinking about trying some honey in a lager or a draught and seeing how that goes.

Thanks for the info. I've got a cold dark corner in the garage so I don't think that daytime temp will be too bad. Perhaps as high as 14 degrees.

How cold is too cold for a lager?

I'm looking at taking advantage of the cold Melbourne weather and making a lager. I'm planning on putting the fermenter in the garage where it gets pretty cold at night. Current night temperatures of 7 degrees. Is that too cold?

I got the Sassy Red at First Choice Liquor in Tooronga. The had the Hop Rocker, and I think I might get that next time. Well when I'm over that way. I had a look at Dan's but they aren't stocking it. Which is a bugger as Dan's is quite close, and its quite a schlep to Tooronga!

Where did you get it? I travel to Wellington alot for work and look forward to getting my hand around a pint of it fresh from the brewery. Shed 22 used to brew it before selling the receipe to Macs. It tastes great on tap.

I left my last brew in the fermenter for 4 weeks and a day.

When I bottled it, it tasted great out of the fermenter and should be ready to drink in a week or two.

I started brewing about 7 or 8 months ago and haven't looked back. I even managed to pick up a second fermenter. Luckily I haven't brewed a dud yet but I'm sure it'll happen.
Just keep at it. I've managed to do some ripper honey porters, stouts, irish ales, honey wheats etc.

Have you made a honey stout before? If so, what was it like?
I'm far from an expert but I'm pretty sure that honey doesn't ferment in the brew so you can't add it in as a fermentable. It does however add a great flavour to alot of different beers.
