Re: Help me make an American IPA recipe

This is becoming a favourite after 5 attemps and slight improvents each time.

LDME 1kg
Maltodextrin 250g
Crystal 250g (Steeped at 70oC 1/2 hour)

Bring the above fermentables, first and second runnings of the Crystal to the boil in 9-10 litres of water and hop as follows:-

Perle 6.7% 20g 60min ...

Re: Difficult to drink Beer....

Yep, I've got too many bottles of a real ale/something else twocan which turned out bitter enough to turn my mouth inside out.

Drinking it as a black & tan with another miserable tasteless "lager" may well be the better option than using it as snail killer.

Re: Homebrew may be on hold 'til Sept!

Do a search for "Son of Fermentation Chiller", it should give you a few ideas.

Cheers!

Gibbo,

IKEA has 750ml brandy balloons for 4$ each. While not a specialty "belgian glass", they're a steal at that price in my opinion. Plenty of volume, you can fit a stubby, 1/2 a litre or more in them with plenty of space left for good ale head, and you can still get your nose in there to ...

Yep, I've had one case of floaties that looked identical to those shown in your picture. It was a darkish Belgian style ale, in fact a low alcohol version of the famous Chimay clone.

I racked again making sure not to let any of the floaties get into tertiary, bulk primed, bottled and crossed my ...

Ben,

If you're serious, I too apologise. Stick around, read lots and tap into the vast amount of experience on the foum. You'll soon realise that you can brew not only cheap beer, but also great beer.

Who knows, you might be convinced to try drinking fantastic beer out of the bottle rather than ...

Maltodextrin (dried corn syrup) will do it for you but don't go OTT with it. 250g for the lighter beers or max 500g for the heavy stouts, otherwise you run the risk of a wax-like or oily mouthfeel.

A bit of steeped crystal grain (100 - 150g) is the next step and will lead you nicely on to specialty ...

And remember, the original bill of materials made up to 22 litres make a great quaffer. You can crank it back without getting as slotted as on the full strength ..........

Gibbo,

I used 100g LDME to bulk prime mine. At 2 1/2 months even though it has close to the same carbonation level as the original, it's just a little too flat for my liking. I do expect it to improve further but I'd use 120g LDME next time

Cheers :)

Weihenstephan clone

Tried one these tonight, two weeks in the bottle and I'm sure it'll get better with a bit more age on it.

IBUs seem to be about right, maybe the flavour hopping was a little high.

It's also lacking slightly on the typical wheat tartness, next time I'd up the wheat malt content, probably go for ...

At the time I was looking for a good strong ale to be cellared for several months and enjoyed during the cold weather months.

It's well above the original's alc % of 5.3 or 5.6% or however much the original is, hence my claim of a "sorta" clone. I was also looking at a "dogbolter" type recipe at ...

Both blonde cans, a kilo of LDME, hop it up with a bit of cluster or willamette and top up to 20 litres or so for a Duvel like strong beer or bockbier/doppelbock.

I'm sure there'll be plenty of advise to the contrary. Anyway, a few ideas to start you on research into toucan (two can) brews.

Anyone ...

Plenty of strong ale recipes on this forum, just need to search for them. Most of them are dark beers although there are some lighter (colour) strong ones.

Get a few brews done, you might find as I did, that your tastes do start to change.

I'd wait for the krausen to drop and then rack to secondary.
