Now how should I keep them and add to them over the next couple of weeks as the rest ripen and then how to store until needed?

I feel much more comfortable about the stout fermenting out fully with your calcs.
Please would you run my quaffer through you beersmith. The online calc gives 4.2% ABV
Coopers Draught 1.7Kg.
500g raw sugar (light)
22.5 litres 18*C
Bulk prime 150g white sugar

Just my opinion of course but I wouldn't do a two can again. It was strongly flavoured but not especially nice.
I'd stay with your recipe on a single can or, ir you really want to taste a two can, make an 11 litre batch with one can. Less to worry about if you're not impressed with the taste ...

No rinse implies, and should be, zero residue and inactive at bottling. Metho for example is supposed to be a no residue substance though I'm not suggesting it as a sanitiser. Would you spray a squirt of cleaner in your beer? Washing in bleach water followed by a shot of clean water works for me ...

Some of these sterilising powders and potions I'm sure are just retailers heaven. A few cents worth of ingredients in a container with a $10 price tag. I'm up to around 250 brews and have not had an infection and my beer is absolutely consistent. Someone made the excellent comment here some time ...

My 'Summer Beer' is ridiculously simple but it makes an easy drinking 4% very pleasant beer. I'm actually looking at dropping the sugar by another half and adding a bittering hop tea but for now there are a couple of (large quantities :wink: ) of this and it's OK.
