Love this brew, maybe a little heavy for more than 2 or 3 but will be making this one again soon.

Yes medium dry malt or at least thats what they call it here. Muntons sells ldm,mdm and ddm in 500g bags. They medium makes the beer a little maltier, but i suppose you could use ldm or liquid if you so choose.

Coopers Pale Ale
1kg mdm
500g honey
yeast with can and one more so 14g
dry hopped this one with fuggles

Have used out of date kits many times, mostly all with success. Only noticable diff. is a bit darker. I replace yeast but I allways do except for Coopers Pils.

300g med crystal
2 oz northern brewer
1oz hallerteau
11g nottingham yeast
Boiled approx. 10 l h2o with 1.5oz NB and liquid from steeped crystal for 1 hour, .5 oz for half hour. hall. at flame out. Top up to 23 liters.
Hope it is not too bitter

Turned out very tasty, I also boiled honey and skimmed off whit crap

Very interesting, I've been scared of the toucan brews as per bitterness. Sometimes go small and a big can ( 1.1 and 1.8) May try the double draught. Never thought of the 11.5 liter brew, alcohol destroys braincells they say. Oh well its all fun

I made some "candi sugar" for my last two brews. Have no idea if it was cane or other.Would it make a diff? Also don't dump candi sugar while it is super hot into your boil, you will not like the results :shock:

I have allways used both. Twist offs-you have to push a little harder for a good seal. Clear bottles- cover em up with an old shirt and keep them in the dark

There are a lot of variables. I've noticed that yeasts play a role as do the kits. But as a rule I ussually add 1 cup dex. to the whole batch and I've mostly had no probs. Some take longer than others but hey. Last one I added some Crystal Malt and it made a big diff.

I've used 1 cup every time and for the past 2 years carb. has been good. If fermentation not complete trouble awaits. I allways transfer to secondary after 4-5 days, then leave for 1-2 weeks.
