I have tried a few things with spices:

Cinnamon sugar as a replacement for normal sugar in priming a cider. The taste was quite nice (especially if heated in the microwave for a couple of minutes before drinking), but the cinnamon tended to form a sludgey mess that floated to the top of the bottle ...

Thanks for that. Did that and it worked out at a nice 5.5%. Should be perfect for what is looking like will be a nice light Pilsner.

Just as a side note, is there a an easy way of determing alcoholic concentration easily from an brew with an unknown recipe?

Just borrow you neighbour's Gas ...

Has anyone tried brewing perry (i.e. pear brew)?

I want to try this, eventually...

Has anyone had experience with brewing perry?

I guess it would be just like brewing a cider: jucing the fruit and then boiling some of the solids up in a bag, popping it all in the fermenter and pitching the yeast.
