Re: Cheese

There's a good thread about cheese making at AHB. The results of my cheese experimentation here -

Turned out really nice. I used the Camembert kit from cheeselinks.

If you do go the fridge approach, you'd have to set it into the wall with the heat sink outside. Putting it inside the room and opening the door would actually heat the room.

Not sure about the capacity of a fridge to cool such a large volume down to 12*, especially in summer with high ambient ...

I have also discovered measuring the airtemp over putting the probe in the beer gives a more consistent beer temp. If the probe were in the beer the fridge would switch on when the beer is at 21C and off at 17C (set to 19) so the beer varies 4C whereas when im monitoring the airtemp it switches on ...

Chris, I've heard that the old BSG was pretty cheesy and that the new one is a lot better. And I have to admit I was skeptical at first, but after watching the first few episodes I was hooked. 2nd and 3rd seasons weren't quite so good, but still well worth a look.

I'm glad he's actually going to ...

Did you know that the record attendance for a baseball game was in Australia? They got over 100k people to an exhibition match at the MCG in 1956.

BSG = Battlestar Galactica

I hadn't heard about the telemovie on this week, thanks Kev. Series 4 doesn't begin in earnest until April next year though.

I've always used azureus though I have heard good things about utorrent. I like that azureus allows you to schedule speed throttling - useful for those of us on optus' shifty off-peak plans. Never tried isohunt, but can usually find what I'm looking for on piratebay or torrentspy.

I was looking ...

Out of interest, what shows do you watch and where do you get them?

I'm limited to 6GB per month so I really have to restrain myself and download movies/episodes only as I need them.

There's some controversy as to whether aeration during the boil (hot side aeration) actually causes problems. I think the jury is still out, and as such I don't think it's worth worrying too much about for amateurs like us.

Something to do with an increased number of nucleation sites causing CO2 to rapidly come out of solution springs to mind, but you'll have to google (or wait) for a better explanation.

You get the same effect adding any kind of powder to a carbonated beverage.

There's a whole bunch of people that swear by it over on AHB. The only thing that holds me back is the idea of the hot wort leaching out plastic from the cube. Having said that, the instructions on a typical homebrew kit involve pouring boiling water into the fermenter, so I guess they think it's ok ...

So Bottletop, you recon the euc flavour diminishes over time? That would be great for a mead, as they are only considered green at 1yr.

Well it did in my case, but I don't use honey a whole lot so there's not a good sample size from which to draw conclusions.

Just checked my notes - undrinkable ...

I don't think you need to rack in order for secondary fermentation to take place. I think it just refers the stage of fermentation after the sugar->alcohol stage (primary fermentation) is over where the yeast breaks down any remaining undesirable by-products.

This can also happen in the bottle but ...

I've tried this a couple of times at the cricket with mixed results.

I reckon you're better off using the homebrand cola bottles as some of these come with unmarked lids which you can replace with new lids from your HBS (so the seals will not be broken). The final result should be indistinguishable ...

Sounds like fusel alcohols to me. How warm did you brew, and how stable was the temperature?

Temp was 20* plus or minus a couple.

I'm going to reuse the yeast cake for ...

Varnish / nail polish smell

Hi guys

Just finished bottling my Cooper's sparkling ale and I noticed a strong smell similar to nail polish (i.e. strong sweet chemical smell).

I have noticed a similar smell/flavour in one of my previous brews which rendered it all but undrinkable for a couple of months before it disappeared ...
