I saw Dogger Dan's recipe posted recently and decided to give it a go.

After just over a month from start, I'm already running out. This beer is a prize winner. In fact I'm now preferring this beer to even the commercial beers I usually buy, including the foreign ones.

The best thing I got was a couple of plastic drums(foodgrade) for fermenting and racking. They're widely available.

I didn't want to learn that the CO2 is actually comes from the yeasties' urine.

Gives new meaning to "getting pissed", pardon the language but couldn't resist.

Now I wonder if the yeasties also get plastered. What a life!!

What intrigued me was the concept of yeast needing oxygen to redproduce, yet except when pitching, we seem to take all measures to avoid exposing the yeast. Does it not run out of oxygen? Where does it get ...

Thank you all kindly for your advice, which, of course, I will follow. The hops are in a small cheese cloth sack. Since I'm using a white plastic fermenter, I can't see if they're floating or not.

leaving in the hops

Yesterday I decided to make Dogger Dan's "killer" beer. However I forgot to take the hops out of the fermenter.

Should I remove them now or wait until I rack in a week or so?

I hate the chance of infection.

Instead of switching lights on and off, couldn't you just hardwire a thermstat which would switch the light on and off as needed?

Forgaot an ancilliary question. Should I bulk prime with the usual amount of dexrose? Won't that increase the alcohol content? (Well maybe that's good)

Got to find a way to get Dogger Dan to let me try one of his beers. After all he's only a couple hours from me. Doesn't everyone relish the chance to sit and chat with an old lawyer? Sure!!! Maybe I'll also take a tour to Aussieland ...

Recharging flat beer

Some of your readers may recall my ending up with a stack of flat beer as a result of using plastic water bottles which didn't hold the pressure.

I am thinking of pouring the beer back in a carboy and bulk re-priming the beer.

Do you helpful folks think it would work? I hate to waste beer to the ...

I had the same problem. It turned out that the pet bottles could not hold the pressure. I had used plastic water bottles. Pop bottles work fine,
