I've notice that Carlton Beers absolutely hammer me the next day. :( Feel very ordinary. Can't say I've ever had that problem on any other beer. Never had a hangover from homebrew of the same magnitude that commercial beers give me.

Just after a bit more info on what the enztme actually does. Does it effect the taste of the beer or does it just ferment down more , increasing alcohol content?

Hops...

Can somone please explain to me how hops are used in homebrew. I've done a little research, but the more I read, the more confused I get. :?
For example, a recipe asks for Finishing 15g of Fuggles.
What are Finishing hops? I've read there are other types as well. What do they do?

While we are on the subject of Kilkenny, i have recently made the recipe kindly posted by Oliver. It has been in the fermenter for 2 weeks now, and the SG is 1018 at the moment. My question.....
