Totally agree with the last 2 posts.

The few Ag's I've made make my kit beers weak and watery by comparison.

Now I feel obsessed with brewing, as opposed to simply putting a brew together once a fortnight. I find myself constantly thinking what to brew next, what grains/hops to buy, How to improve ...

Tried our first bottle last night. Nothing to write home about, but drinkable just the same.

I think I was a bit impatient with mine. I'm not sure that it had fully fermented when I stabilised it. It still has a fizziness on the tongue.
It was at SG 990 when stabilised, but is my hydrometer ...

Ok, pitched my Shwarzbier onto the Nottingham yeast around 8 ;30 this morning.
As I sit here and type, it has around 30 mm of krausen with heaps of activity through the airlock.
Hasn't exactly exploded into action, but that is a very short lag time.

I've got a Shwarzbier(sp) boiling ATM that I intend to pitch onto a yeast slurry tomorrow. It will be going onto Danstar Nottingham Ale yeast, that currently has an Altbier going down.
I'll re-post tomorrow and let you know if it goes like a rocket or not.

I had a pleasant few pints with friends at the Napier last night.

There was just one problem. Although I only had beers from some of the smaller breweries, I found it all to be a bit bland. I had a pint of ale that smelled like it had something wrong with it, but none of my friends could fault it ...

I do the same as oldbugman. Just let the keg pour itself, so to speak, until you find it needs gas to pour. Then I set the gas at ~8 psi.

Doing it this way, I've always been able to turn an over carbed keg into a normally carbed keg in a couple of days.

If you forced, at what pressure and for how long?
If natural, how much priming sugar/dextrose did you use?
What pressure are you trying to pour at?
