I now brew all-grain, but the Coopers Sparkling Ale brewed to the recommended recipe, but using Coopers pale ale harvested yeast and fermented around 18-19 degrees, remains my favourite kit brew.

Personally I wouldn't use the Sparkling Ale. There are enough complex flavours in there already, such that you may end up with something quite funky.
Harvest some Coopers bottle yeast and ferment the Sparkling Ale exactly as the can instructs. It's a winner, and a house favourite here.

Others seem to really like the Blue Mountain Lager. Personally I didn't like it, and ended up tipping 3/4 of the keg into the garden after a few months of slow movement. In fact, i'm yet to find a Morgans kit that I like, having tried quite a few.

Brewing Classic Styles has this all-grain recipe for Lefty Blond (5 gallons):
Pilsner malt - 5 kg
Wheat malt - 227 grams
Cane sugar - 680 grams
Aromatic (melanoiden?) - 227 grams
Hallertau 45 grams @ 60 mins for 24.5 IBU
Ferment with Wyeast 1214 Belgian Ale or WLP500 Trappist Ale.

I run Beersmith via Parallels on my Mac.

I concur that the yeast is the critical element, and the more the merrier.

Ahh, thanks Rob. I ended up purchasing a Fisher and Paykel model today, about 165 litres. It'll nicely fit four kegs with a collar.
Hopefully i'll post pics in a few weeks when I get her setup.

I've had mine in the bottle for almost a month now, and a bunch of blokes I had over for a drinking session yesterday were thoroughly impressed with the product.
Even a non wheat-beer drinker was asking for more.

then I'd suggest you leave the kits well alone, grab some pale malt extract and boil the extract with plenty of Saaz...You might pay a bit more but you wont have to worry about the PoR peeking through when you pour the first glass.
