This is what I do.....
Add dex or sugar to each bottle.
Add 50mm of beer to each bottle and agitate so the beer and sugar mix.
when you get around to the first bottle you part-filled (maybe 5 minutes later) you can fill the bottles to the top with no foaming.

I freeze liquid yeasts, and fire them up again.
Usually two starters required.

It don't cost much to experiment.

I don't rack, too much trouble.
I believe in letting the yeasties do their job in peace. They know what they're doing.

I'm using Wlp 810 right now.....
Under my house is averaging 14 deg. C this winter.
It seems like a pretty flexible yeast for someone like me who doesn't want to bother with refrigerated brewing.

WSC,
I re-pitch yeast all the time, up to a week after harvesting, without making a starter.
I pitch about 200mls to 300mls of yeast slurry.
Just keep everything as sanitary as possible.

Baby steps!
After you are sure that your sanitation is spot on, then you can experiment a little.
I don't rack and my beers pour crystal clear after two months in the bottle.
But then again I couldn't be bothered bulk priming either.

Napisan.

Instructions.... Rinse out fermenter with hose.
Leave high wort mark alone.
Add a litre or two of water to botom of fermenter.
Add Napisan (isntructions on pack)
Swirl Napisan in fermenter several times every few hours. Contact all surfaces.
Leave overnight.
Next day wash and scrub out as ...

I totally agree with coit on the Coopers Stout kit.
It's great, bulletproof, easy to drink, and you can add lots of diffeerent things to it.

As coit said, just lay off it for a few months.

The Thomas Coopers Australian Bitter is a very nice beer.
My beer of choice at the moment.
I made two batches....one with the kit yeast and the other with Safale04.
The Coopers yeast brings out the flavours better.
The next batch I make will definately be done with the supplied yeast and 1.5kg light ...

But why do you suggest boiling for an hour, doesn't that effect the flavour/bitterness profile of the hops?
