Also, has anyone used coffee before in a dark ale or stout? Im going to try it anyway, but just want to get a heads-up on the hops i should use, malt extract ...

Yeah, it could be worse.

I found out that the hops didnt match the brew afterwards when I got home and read up on it. That will teach me to trust a HBS guy instead of doing my own research.

yeah, I was thinking that the bottler would get clogged.

Cheers Oliver.

First time using hops, and the smell from the pellets is unbelievably strong. I only steeped about 15g.
Hopefully the taste isnt too overpowering, becasue the bubbles coming out of the fermenter smell nothing like the pale ...

Thanks guys.
I just went and bought some Safale yeast, and 1kg amber liquid malt, and the dude at the HBS suggested goldings hops, which i bought.
I will add 500g dextrose for a bit of a kick.
Hopefully that will do it.

Thanks again

I just bought 2 pale ale kits, and noticed that they give you the same instruction sheet as supplied with the Bavarian Lager.
Confused, I looked up on the Coopers website the instructions for brewing Pale Ale, and it says:

"Ale yeast strains are generally the most reliable for home brewers ...

Do I need Hops at all?

I have never used hops, in any of my 9 brews.......still a rookie.
I find that my brews have been great ( some of them anyway ) without any hops, and when I drink a highly commercial beer these days, they dont taste too good at all. And I think the Hops is the difference.

Do you need hops with ...

Simo,
I havent had a lager complete fermentation in under 13 days. But my temps have been lower. But still, I think you should give it a few more days.
As for cold conditioning, I have had a batch of Coopers pilseners cold conditioning for 4 weeks, and they have just come good..... they have been ...

This Brew is my favourite.

Add to the Kit the liquid malt extract, 500g dextrose and 300g light dry malt.

thats what it says on the kit, and I got 5.8%.

Best beer I have made yet.

I think you will find that the lagers take longer to condition in the bottles.
whereas ales only take a few weeks.
And i have heard that the plastic bottles do leak out air very slowly ( apparently over 6 months will be too long in plastic )
So I have been using the PET bottles for ales, and glass ...
