We play a game over here called lawns bowls - I imagine it is very similar to Curling. You throw a big ball at a little ball and whoever gets closer wins. Drinking while playing is mandatory.

I clean and rinse my bottles then put them in the oven at 120 degC for 10min to sanitise. Let them cool back down before filling them. I have never have a bottle go pop yet.

True - the dextrose is a fermentable but, it would also be used to give the yeast something to get into quickly.

Adam,

Go with number 3 - Bring the temp back upto 20-22 degC and see if the yeast starts again.

If it does not start again check the SG. If the SG is OK, it has finished fermenting anyway. Taste it and see if the brew is OK - the high temp may have made it a bit funny but I think it should still ...

Hi Prickles,

The amount of malt should be fine - although you might find your brew has a slightly higher alcoholic % than others you might have done before.

The difference between light and dark malt is dark malt is 'cooked' for longer giving it more of a burnt taste.

You can substite any sugar ...

Dan, you get Coopers in Canada? Cool, I didn't realise their roots spread that deep.

When I use Coopers I always get some Saf yeast just incase - I have had a few duds too.

Thanks lads,

If the sugars are going through this further stage of breaking down and still producing CO2 - Will adding more sugar when I bottle cause the bottles to explode?

If not, how does adding more sugar stop this process?

I have recently brewed a Coopers Sparkling Ale, but was concerned about the length of time the fermentation went for. I was expecting it to take a little longer due to the fact it was mostly malt, but not as long as it did.
