Reusing yeast from bottles and previous fermentations
A number of my homebrewing friends are harvesting yeast from commercial bottles or reusing yeast from previous fermentations. I wanted to know how it was done so I've researched it and then written up this guide - hope it is useful to people! :D

That's a good idea.
A number of bitters (eg Bishop's Finger and Fiddlers Elbow) seem to be based around Goldings, so I'm thinking to go with that. Those same recipes also use wheat malt - I can't get grain for that but I could use a pack of wheat spraymalt. Based on that, this is what I'm thinking ...

I'm looking to make an English style bitter using DME and speciality grains. I'd like to use a single hop because I want to get an idea of individual hop flavour - but if that's really not recommended, I can combine hops.

Using Amylase Enzyme to restart stuck fermentation
My fermentation was stuck (same hydrometer reading for several days) at 1.018-20 so I added amylase enzyme, which is supposed to aid in restarting stuck fermentation.

I took an "All Amarillo IPA" recipe and did a calculation to replace the hops with Centennial based on AAU (link and more details are in the first paragraphs on the webpage, so I wont repeat here).

My main reason for putting this beer into a secondary is because I want to add dried orange peel and coriander. I've heard that I shouldn't put this into the primary; instead I should put it into another bucket and then rack from the primary to the secondary.
