Been dragging my heels on this one - very sorry. Hopefully will have a bottle on the way in a couple of weeks - I want to do a QA first. Belgian Golden Strong 8%+. Backup will be a more modest English Brown Ale.

As long as you mash it with a significant portion of malted grain, otherwise you get sweet f.a., as rotten has successfully proven.

You need some malted grain in there to provide enzymes to convert the starch. Though I hate to say it, speedie was dead-on.

Apologies to the interstaters...

Lob, Cook IGA has an impressive range of imported beers, too (Belgians, British, and others not seen in Dan's, Plonk or other A.C.T. bottle shops). If you ever find yourself out that way, it's worth a look, but check the BB dates.

Speedie makes me feel good about myself...even though my beer is rubbish.

I don't think anyone takes him seriously enough to warrant banning. Then again, I would be wasting less time! trying to decipher his dribble.

Not suprising that your ailock has stopped bubbling after 3 days at those temps, ideal temp would be at least 5C lower. Whether or not is is completeley finished, you would have to consult your hydrometer.

Another rule of thumb is the "30 Rule" or something like that. Basically: pitching temp + finishing temp = 30. i.e. pitch at 13C and let temp rise to 17C to finish. I have done this with liquid with good results, but haven't tried WB06 for ages.

Mate, his beer is base, crystal and late US hops.

You can remove all the qualifiers you like - APA is still the closest fit to what he's making and you're wrong.

I reckon you might want about 30IBU max for a hoppy pale ale or bitter style.

30IBU barely squeaks into spec for an APA. Absolute lowest IBU value for style.

Brown hops should not go into beer under normal circumstances. Throw them out - NOW!

Centennial and Amarillo will contribute to a nice APA-style beer and you can probably substitute 1-1 with the POR as per option #1 above. Seriously, using stale ingredients (hops, grain, yeast) will not reward you ...
