One of my local HBS guys told me that he couldn't help me with my inquiry as he didn't actually brew himself.

When he said that it was in the context of brewing beer, he did however brew spirits using essences which I consider to be more of an answer to the impending oil crisis.

Don't tip it. It will probably taste like bad homebrew for a couple of months, but after that it will be drinkable when very cold. Just pretend it's VB.

But do try and do yourself a favour by getting an old fridge. Even without a temperature controler you can do nice ales at an average 20 *C by ...

My back is kind of stuffed. When it was realy bad and I didn't do full boils etc, I just did the kit, dry extract straight into the fermenter and stuff and put the fermenter in the brew fridge and carried 20 or so pyrex jugs of water to it one by one so the max lift would have been 5 kg or so.

As you said you wouldn't mind trying different hops, you could try substituting some of the amerilo for cascade to give a more complex flavour. I for some reason or another can't help myself and always mix my hops up, and cascade and amerilo go hand in hand for me.

While my reference to the self-consumption of trub were in jest.. or were they :shock: , I will have a tasting oportunity of German Pilsener trub comming up in about 2 weeks. For the vicarious endulgement of the readers here, I will post tasting notes of this delightful.....erh disgusting creamy ...

It was a dried yeast pitched at 25 degC. Having tasted this one from the fermenter, I think I'll stick to grain and just keep eating the fermenter sludge myself and not waste it in beer.

Using old yeast as a nutrient

This was raised in a recent post.

Is it worth while saving some sediment from old brews (the last one done), and adding the sludge to the boil? There is lots of it and I presume most of it is yeast. I'm almost tempted to try it. I did a kit and extract brew for my last brew and the most striking ...

The golden saaz that I picked up the other day was an ale yeast too - I wasn't sure of the quality so I bin'd it and used the brewcellar Euro lager yeast.

It is like drinking dirty water. I've tipped better brews than this. To think somebody even gets paid to make it. The only thing they havent done is put a sign on the end of the bottle saying "Ha, you paid for it" would be the only fitting end to the bad joke known as Amsterdam Mariner.

I use the formulas in palmers book and made a spreadsheet out of it all. It's very crude and I get consistant results that seem to be true.

Just for curiosity, you could make a batch using unboiled water and see if it is infected. I would think that any microbes that are harmfull would be evident in the sugary wort.

At least you could see if you'll die if you drink the water.

I did an AG a few months back with 250g crystal. Turned out very amber. My personal preference is not to use it at all. But if you must, I'd go about 100g.

I don't mash out and get consistant FGs of about 1.008 no matter what the OG. - within reason. From the start of mash to the end of sparge it may be 2 or more hours. Does that sound like too much enzyme activity?

Yeh, I let a mate taste it today and he thought it was tops. Funny thing is the last one that he raved over was a coopers pale ale kit that was horribly infected - bubbles the size of pepper corns.

Lactic acid infection?

Did an AG APA 2 weeks ago. simmilar to Trough Lollies APA.

starting gravity 1046 FG 1006-1004. Seemed abit low. Beer had nice tast at fermenter but lacking in body but still nice. Medium hop flavour.

At 1 week, crisp bitterness but poor body, dreadful head retention considering it has 250g wheat ...

I always used to end up with about 1014 with kit beers with BE2. 1kg of dry malt extract seems like a big beer plus the grain. Like KEG said, what is the temperature, a slight temperature correction might account for your gravity being say 1016-1017. It might well be done.
