Im a proud south aussie who was brought up on bitter beer, so i love the stuff on hot day.
So im looking for a recipe on

west end draught
Southwark bitter.

any ideas, most people hate these beers lol so not many clones on the net, but this stuff i could drink all day in summer

Not sure about southwark bitter as its been a very long time since i drank that,

West End Draught, like most Aussie 'draughts' is a very clean, almost tasteless lager.

Assuming you are a kit brewer....

1 x Lager tin (brand of your choice)
1 x Brew enhancer that is mainly dextrose
Dissolve and top up to 23L
Lager yeast fermented at lager temperatures (8-12C).

Yeah kits up until recently, trying to remove large quantities of dextrose from brews,
Been doing extract beers and partial mash

Whilst the general consensus is to remove dextrose from your kit beers resulting in 'better' beers that rule doesnt apply to aussie lagers which contain up to 30-40% dex if rumours are anything to go by.

You want a dry, crisp beer and using too much dry extract will thwart your efforts.

Even an AG brewer would add sugar to brew and aussie lager as too much malt will result in far too much flavour.

But, the lager yeast is the key. An ale yeast will produce too many esters which will add too much flavour and the wrong flavour for a lager.

So a true lager yeast at lager fermentation temperatures are the key.

And absolutely no hops.

Hahaha,
Yeah ur right, they dont have much flavour lol. Oh how australian brewing has advanced.

But there is something about stinking hot days and ice cold bitter beer that hits the spot.

So dry, not sweet
Lager not ale yeast.

No extra hops though? I like bitter beer so i assume start with a draught or bitter kit :)
