Sorry about asking a dumb question Rotten, I just saw that Warra48 mentioned that
"If you don't like Amarillo hops, substitute Cascade, like I do." I was just curious to get an idea of what the difference is, I will crawl back into my hole.

Amarillo tastes more like stonefruit. Nectarines and peaches. It's the flavour/aroma hop of James Squire Golden Ale.

Cascade is citrus. Grapefruit and orange. Cascade is in Little Creatures Pale Ale along with chinook.

I'd suggest brewing the amarillo golden ale the first time then change the hops next time. The light amber works with most american c hops as well as the punchy NZ varieties and galaxy.
