AG recipe advice - DSGA & a wheat beer

Well, my Braumeister (actually, the replacement) has arrived at Grain and Grape. I'm thinking of picking it up on the weekend, grabbing the ingredients for two brews, then taking Monday off (not as a sickie, I hasten to add!) to brew.

Here's what I am thinking for the beers to make:

The latest incarnation of the good Dr Smurto's Golden Ale:
55% Maris Otter
20% Bestmalz vienna
20% Weyermann rye
5% Carabohemian -- problem is that G&G doesn't have this. What's a substitute?
Magnum @ 60 to 30 IBU
Amarillo 1.5g/L @ 20 and 0 (in lieu of Victoria)
US-05 (yeah, yeah, I know, I should go liquid).
Mash - 67C for 90 mins, 78C mashout.

A wheat-ish beer:
55% JW pilsner
40% JW wheat malt
5% JW crystal
Galaxy @ 60 to 30IBU
10g Galaxy @ 10 and 0
10g Citra @ 10 and 0
US-05
Mash at 65C for 90 mins

I'm aiming for something similar to Mountain Goat Steam Ale with the second recipe. I had it today and I am sure it's been tweaked recently and is a little richer than previously. I'm yet to run it through BeerSmith but any initial thoughts would be much appreciated.

I'll probably adapt both recipes to be no-chill.

Thoughts/criticisms/comments, particularly about the substitute for carabohemian?

A sub for carabohemian, after you lecture G&G on their poor form in not stocking it, could be weyermann caramunich 3, caraaroma or simpsons dark crystal. I'd go for the latter.

30 Ibu for a wheatie might be a bit much but depends on personal preference , of course.

I'm not sure if any this actually relates to Mountain Gout steam ale as I am yet to try it. Just putting it out there.

Don't apologise for using US05. I love it. Make up a starter from your last run wort. I have just used liquids for my last two brews, and will probably give them one or two more runs. If I don't see a decent improvement, it will be back to the US05.

Thanks for the replies fellas.

I might bitter the DSGA with Amarillo instead because I'll have a bit of that over.

Message received about the bitterness of the wheaty thing. I actually took the IBUs from a MG Steam Ale recipe I found, but upon further investigation (on goatbeer.com.au) Steam Ale is 18 IBU, so I will adjust accordingly.

emnpaul, do yourself a favour and grab some Steam Ale. It's a great sessional beer. Both of my locals have it on tap. In fact, a pint and a pot bookended a bottle of pinot just last night!
