Been thinking about doing a pumpkin ale for a while. Did a quick search and found Keg's pumpkin pie ale.

For the extract version, you have two options, unfortunately both require you to do a large boil (8L would be the minimum I would recommend).

If you do not mind steeping grain simply sub in 3 kilos of LLME. If you do not want to steep grains use 3 kilos of ALME (Amber Liquid Malt Extract).

You could use a Lager kit and a kilo of LDME with the steeped Crystal Malt also and would then not need to add any hops since they are just there to give a hint of bitterness.

If you do not want to use the Cream Ale yeast US-05 works very well at low temps (15-16C).

How do the starches convert if not mashed? I wouldn't have thought it would work as a ME brew.

Sorry Chris I forgot to explain a few things.

You need to add the pumpkin at the start of the 30min boil. I put mine in before I start to heat it to the boil, then start timing the 30 minutes once it reaches boiling. Also I do not add the brown sugar or lactose until flame out. The spices are put on the pumpkin before it is roasted and I usually dry hop some more with the Vanilla when bulk priming (do not boil the vanilla, it will go bye bye!).

I have a 18L? pot and don't mind steeping so let me see if I've got this right.

Steep spec grains.
Roast pumpkin until caramelized.
Boil pumpkin, steep liquor, liquid malt and hops for 30min in 8L boil.
Add spices to boil at 5min.
Add lactose and brown sugar at flameout.
Ferment
'Dry hop' with vanilla

Couple of questions Kev.
You mention roasting the pumpkin with spices, do you just use more of the same as the 5min addition?
Would you add all the liquid malt at the start of the boil? I'm thinking about hop utilization.

Its probably not so common here but I assume the pumpkin pie we're talking about is the sweet version rather than a savoury one. When I was little we called it Grammar pie or something like that, not sure on the spelling. Maybe it was after the variety of pumpkin. Then again maybe it was Grandma pie because she made it.

Since you have an 18L stockpot I would suggest you do a 12L boil and use enough bittering hops to get close to 18 IBUs.

I usually put the spices on the pumpkin about half way through the roasting when I do the first stir. I do not put any further spices in the boil, but I usualy do add more (to taste) when I dry hop with the vanilla in the bulk priming vessel.

Because of Green Bullet being a high alpha hop I would not worry about utilisation. You can use any clean high alpha hop for the bittering and it would work well.

Yes, this is a sweet pie served as a pudding with ice cream or sweetened whipped cream. I will post my 'grammar' recipe for the pie if I can find it in the old cookbook ;)

The boil would get the flavour out of the pumpkin, so I could strain into the fermenter? I don't usually strain just to get hops out.

I usually do strain it a bit, but it does settle out in primary pretty well.

No, but a brewing mate here in Toowoomba recently made a great pumpkin beer. Will have to get his recipe.
