If you make it back to SA any time mate there are plenty of bottles of this monster. Still a hoppy beast after 5 months in the bottle. Will crack another one on the weekend.....

My cats love to drink water out of a glass but wont go within a foot of a glass of this!

Congrats Doc on your results. Great recipes...Have done the Golden Ale, doing it again :D ....next w/end, using Wyeast 1272 American Ale II yeast.

The Golden ale sounds delicious... I brewed a partial of it, tasted awesome out of fermenter, just bottled it and booooom... infection. blurrgh.
The worst thing - i didn't have any cold beers to wash it down with. I have to wait for them to cool down! Oh how it hurts

My recipes are your recipes, after all, i get my inspiration from here and other beer forums!

All of your recipes are in my folder so i can tweak them and brew them at a later date!

Besides, as i a research scientist, i believe that anything i discover should be shared for the greater good.

Great stuff doc and congratulations on your success.

Im a little curious. Your Golden Ale recipe doesnt seem to be "in style" for a British Ale. Is Amarillo common in British Ales? US-05?

Whilst im sure its a cracking drink and a deserved winner, is it a "British Ale" ? Seems more in style of an American Pale Ale?

The style guidelines for 8B
Flavor: Medium to high bitterness. Most have moderately low to moderately high fruity esters. Moderate to low hop flavor (earthy, resiny, and/or floral UK varieties typically, although US varieties may be used). Low to medium maltiness with a dry finish. Caramel flavors are common but not required. Balance is often decidedly bitter, although the bitterness should not completely overpower the malt flavor, esters and hop flavor. Generally no diacetyl, although very low levels are allowed.

Overall Impression: A flavorful, yet refreshing, session beer. Some examples can be more malt balanced, but this should not override the overall bitter impression. Drinkability is a critical component of the style; emphasis is still on the bittering hop addition as opposed to the aggressive middle and late hopping seen in American ales.


Copped quite a bit of flack over this beer. As it states above, US hops are allowed and the balance is towards malt not hop flavour. The bottled version which i entered didnt get dry hopped and had been in the bottle for 4 months. Its nowhere near the IBU or flavour/aroma levels of an APA. The yeast i will concede on and in the future will be experimenting with english ale yeasts.

Have you made your JSGA clone with a Cooper's yeast? If so, what did you think? I imagine it would produce a drier beer than the 1056? Just wondering as I am planning an attempt on the summit....

Dunno Neil. I use US05 generally but the next batch i will use 1272.

US05 (or nottingham) are pretty good attenuators so i dont think the coopers yeast will produce a drier beer.

IMO the reason why coopers beers are so dry is low mash temps and hefty amounts of sugar (despite claims to the contrary for the pale ale).

It is a beer i know well so i should really play around with it more but because it comes out nice every time i haven't messed with it.

Well, Doc, as they say, when you're on a good thing... The thought just occurred to me as I was having a Coopers Sparkling Ale in Adelaide the other night- what would it be like in your Golden Ale? So, perhaps fruitier rather than drier? Anyway, I may just give it a go but I'll make sure I ferment it out coolish.

Knocked back several sparkling ales at a conference dinner on Monday night and the thought didnt cross my mind.

Guess i need some more sparkling ale...... :lol:

Having thought about it a bit more - maybe a tad maltier, some esters from the yeast (what depends on temp if ferment) and maybe a lower hop presence...
