Carlton Midstrength recipe ?

Suggest or request any recipes for a particular beer or style of beer. Post all recipes here, including kit, partial mash and all-grain.

Carlton Midstrength recipe ?

Hi Everyone,

Can anybody a suggest a simple recipe for a reasonably close Carlton Mid clone ?

I am doing kit and Kilo brews with a few extra's, and am happy to continue with those, or use straight malt / hop additions / specific yeast, but I'm not ready to do a full AG brew yet (will one day though).

I can do a Lager or an Ale, (I have fridge with temperature control now).

Any suggestions, tips or information would be greatly appreciated.

I would love to get a Carlton Mid happening fairly consistently, before I experiment too much more with recipes.

I recall I tried a recipe that was listed at me local HBS years ago. I'll see if I can dig it up at home.

Hi Chris

The recipe is from a Morgans pamphlet called popular beer recipes.

Morgans Australian 3.5 kit
400g Dry Gold Blend - no idea what this is but if your HBS stocks morgans they might know
2 x 12g Pride of Ringwood finishing hops
OG 1032
FG 1010
7.2ebc
3.5% alc

I honestly can't tell you what the resulting beer is like. I brewed it about 5 or 6 years ago when I was just getting back into brewing.

I would suggest buying your hops from other than your HBS if they only stock the morgans sachets. From somewhere like craftbrewer you'll get cheaper, fresher hops. I know the hops at my local have been sitting in temps over 30C for years, they must truly be shite by now but they keep suggesting I buy them.

Also maybe sub a better yeast, and most importantly if your brewing a lager try to get your brewing temps down. I quickly moved away from trying to brew lagers because of the high temps up here. Now that I have a freezer and fridgemate I'm trying a few with much better results.

Will do it at 13 deg as a lager, and report back on the forum when its done.

Hi Chris
I did a Toucan with 2 cans of Morgans mid 3.5 & 500g dex. Fermented with a lager yeast at 12 degrees, it came out really close and was enjoyed by non homebrew drinkers.

Does using 2 cans make a big difference ?


I've got mine in the fermenter now, been in 2-1/2 weeks.
Temp at 12 deg for 2 weeks,
Racked to second fermenter couple days ago.
Now temp at 4 deg, sg at 1010.
Will bottle in about 2 weeks.

cant wait to try it.

if its any good, will post the recipe in a separate thread. :)

Using the 2 cans definately came out better than previous attempts with the kit & bits method.The 500g dex balances it out as toucans can be harshly bitter.

Will post here in about 4 weeks and let you know ho it goes.

I bottled it on Sunday, its my first go at a lager, and also with using lower / stable temp and lager yeast, so am really looking forward to seeing how it turns out.

I hope its nice, bacuse I want to gst some stocks of nice beer before I experiment too much more.

Probably this weekend I'll crack one for a sneak preview, cant resist, and most HB's seem to be quite nice even after a week, or is that just me :)

Downside of lagering, fridge space etc taken up for so long, am on the lookout for an old deep freeze so i can get a bit more cooling space.

Well, sorry about the late response to the recipe suggestions,

I'll post the exact recipe later, but that was a seriously nice beer.
After 1 week - real nice, after 3 weeks awesome, now totally evaporated.
Wish I had some to try after aboiut 3 months.

From now on that will be my standard brew.

I think the lower temperature brewing / getting rid of all the fruity / ester flavours of summer brewing makes all the difference.

Will post recipe shortly...
