Simple cider

Hey all,

Does anyone brew a naturally fermented cider? I've just tasted my first attempt. Here's how I made it:

~15kg pink lady apples, run through a juicer whole (pips, skin & all)
Tipped into fermenter and leave for 3-4 weeks
Filter (or at least attempt to filter) into keg

Came out quite nice. Slightly on the sour side, but drinkable nonetheless.

I think 3 or 4 weeks is very young for a wild yeast cider. What was your FG?

I didn't measure it....

I have it in the keg now. Do you think it would be worthwhile taking out of the fridge and leaving it for a few months?

Nah. If it is tasting good I'd keep drinking it and make sure it didn't warm up again in case it wanted to start up again.

I have read it generally takes 2 to 3 months for a natural fermentation with wild yeast, sounds like you would have a very non alcholic brew as natural yeast can take upto 3 weeks just to start, there are some good books on cider which have some details like "craft cider making" by Andrew lea and he has his own blog www.cider.org.uk, I too have inly just become interested in this and have just bought 6 cider apple trees from tazzie..
Is there anybody out there......
