Apple & Blackcurrant Cider

I've come up with a simple recipe, I just thought I'd put it out there for some feedback before I commit to it.

Here it is:

16L apple juice
4L apple & Blackcurrant juice (not enough? Too much?)
500g Lactose (I'd like it sweet but not very sweet!)
Yeast (us-04, us-05, cider, champagne?)

Any feedback or recommendations would be greatly appreciated!

I'd steer clear of the champagne yeast if you don't like it too dry.

I would also ferment it without the extra sugar and then taste it before adding extra sugar. You might also find that you need to add some more blackcurrant, but a taste test after fermentation will tell you.

I've heard us-04 is a good yeast to use to save some of the sweetness. Can you confirm this?

The yeast you want is US-05; there isn't a US-04 - there's S-04, but that's an English ale yeast and not the neutral profile that you'll want in your cider.
