Leatherwood Raspberry mead recipe

By request, here is my leatherwood raspberry mead recipe...

3.5kg raspberries
5kg yellow box honey (or equivalent)
500-1000g leatherwood honey (depending on taste)
3 teaspoons of citric acid
1 teaspoon of vegemite

Use Wyeast 4783 if available.

I won't go through process, as there is no great procedural innovation in this recipe. Just remember not to boil the raspberries unless you use a pectinase.
