Lemonaide Question

OK so the plan here is to make some lemonade for my daughter. BUT now I'm super keen to make a 2nd batch that is alcoholic as well.

What is the brewing process for NON-alcoholic lemonade?
From what i know it goes a lil bit like this (correct me where im wrong)

boil up some water, the lemon juice and zest, a bit of ginger and sugar (how much, its got to have SOME right? for a 23 litre brew) add lactose (100-200g I figure).
strain it into barrel, cool it, then add water and yeast (and yeast nutrients?).
after 2 hours bottle it with priming sugar, i might decant it into a second barrel b4 I bottle it if its got sediment.

if this is the case, then I'm going to do HALF the brew non alco then the second half Alco... I'll just add a kilo of sugar after I've bottled a bunch for my daughter, let it brew out then bottle the rest.

Sound plausible?

Also, can i use that lemon juice from a bottle? its 99.9% lemon juice! haha but it DOES have preservatives 230 in it.
