My first AG details (with pics)

Postby squirt in the turns » Wednesday Aug 18, 2010 11:10 pm

It's done! As of Sunday afternoon, I'm an AG convert! Hopefully I’ve done reasonable justice to drsmurto’s famous golden ale recipe.

Scaled up to 22 L batch in Beersmith. Expecting efficiency of 70%, which it appears I managed to exceed. I also guessed at things like the "loss to trub and chiller" and boil off evaporation rate, but it looks like I got lucky, as I pretty much exactly hit predicted volumes.

My Beersmith figures (presumably including my efficiency) might be off, as I added the pre-defined ingredients that seemed closest to what I actually got from Craftbrewer. E.g. I entered UK pilsner in Beersmith when I bought Aus pilsner and the recipe calls for Weyermann.

I’m not sure what happened with my mash-out step. After the duration of the mash, which ended up being 80 minutes, I dumped 6.83 L of boiling water in. Stirred well and measured the temp all over, but it only got to 67 when I was aiming for 77. It didn’t seem to hurt anything, though.

My pre-boil SG was 1.027 at 63 degrees, so 1.044, making for 82.1% efficiency… seemed ridiculously high for my first attempt, but was checked and double checked.

No chilled in a cube, first in the swimming pool, then in the fridge. Strained into fermenter on Monday morning and pitched a packet of US05. It tasted fantastic even then!

Here are the recipe details as copied from Beersmith:

Recipe: drsmurto's golden ale
Brewer: Matt
Style: Extra Special/Strong Bitter (English Pale Ale)
TYPE: All Grain

Recipe Specifications
--------------------------
Batch Size: 22.00 L
Boil Size: 26.32 L
Estimated OG: 1.053 SG
Estimated Color: 14.9 EBC
Estimated IBU: 38.0 IBU
Brewhouse Efficiency: 82.10 %
Boil Time: 60 Minutes

Ingredients:
------------
Amount Item Type % or IBU
2.64 kg Pilsner (2 Row) UK (2.0 EBC) Grain 56.41 %
0.88 kg Munich Malt (17.7 EBC) Grain 18.80 %
0.88 kg Wheat Malt, Bel (3.9 EBC) Grain 18.80 %
0.28 kg Caramunich Malt (110.3 EBC) Grain 5.98 %
22.00 gm Amarillo Gold [8.20 %] (60 min) Hops 19.9 IBU
16.50 gm Amarillo Gold [8.20 %] (Dry Hop 3 days) Hops -
33.00 gm Amarillo Gold [8.20 %] (20 min) Hops 18.1 IBU

Mash Schedule: Single Infusion, Medium Body
Total Grain Weight: 4.68 kg
----------------------------
Single Infusion, Medium Body
Step Time Name Description Step Temp
60 min Mash In Add 12.21 L of water at 73.5 C 66.0 C
10 min Mash Out Add 6.83 L of water at 100.0 C 76.9 C

Pictures of the whole messy ordeal:

Ghetto tiering system with Fridgemate being used as thermometer in the background. Trying to get the strike water to the right temp.
Image

Grains just added. Temp is a little over at 69, but a bit of vigorous stirring got it down to 66 in about 3 minutes, at which it stayed for over an hour – good Esky! :D
Image

Design flaws: The tap is below the base, and has to hang over the edge of the counter; plastic used in too many places (although I leak and taste tested with boiling water prior to breaking it in, and all was good).

Draining the mash and vorlaufing:
Image

Somewhat later (after sparging), a rolling boil is achieved:

After the first addition of Amarillo. I'm led to believe that now is the appropriate time to crack open the first beer :P Yes, this is some time after sparging and the mash tun is still full of spent grains

Cube hot-packed, on its side to sterilise the top and handle, along with plenty of mess to clean up:

The cube just hanging out, chilling in the pool

Thanks rotten. I'm pretty sure there's no going back, eh?

It's a Crown, with an exposed element, which I got from Craftbrewer. On both this forum and AHB there are complaints about the boil dry protection on the concealed element Crown urns switching off the element and preventing a vigorous boil. This urn was cheaper, and had no issues holding a rolling boil for the full hour. As far as I can gather, the only advantage of the concealed element is that it's easier to clean.

Well done, Squirt! But you do seem to have made one serious omission - no first AG disaster? For shame!

I've got a question if you don't mind. I've got the same brand of urn as my HLT and I'll be buggered if I can get my silicon hose over it - what's the trick?

Top stuff. Now, admit it, that really wasn't so difficult, was it? :D
Welcome to the dark side, and the next stage of the obsession.
Hope your brew turns out to be a cracker.
Nice to see your set up too.

I love ghetto setups - a few milk crates still take pride of place in my 'system' which is very similar to yours.

I am impressed you showed so much self control on your 1st AG and waiting until after the 60 min addition before cracking a beer. It took me many stuff ups to learn that one and i second Bums comment re no stuff ups. That's unfair to all of us who suffered burns, leaks, missed temperatures, under/over volume!

Post a picture of your first born when it's in a glass - bet you wont be able to wipe the smile off your face!

It actually was easier than I expected. Having only done kit and bits before and had something go wrong with pretty much every brew, e.g. wort on the floor, boilovers, even 1 infection, I surprised myself by not stuffing anything up (although we'll reserve final judgement until we see the finished product). I guess I spent so long obsessing about it and hassling you good folks that I had the process pretty much straightened out before the event. Don't worry, though, there'll be plenty more AG brews for me to cock up one way or another :D

persistence, basically. I'm not sure if having both the tube and tap hot helps or not. no real secret, i'm afraid. I found it a massive pain too.

Squirt,

With no real issues I'm not sure if we can classify you as an all grainer!! I dare you to do it again(with no issues), but this time after having consumed a quarter of your first all grain batch :D

Well done!

Cheers

 Yeah, Bum, that'll help. My 2nd batch, TL's SNPA clone went nearly as smoothly. I mashed in at about 6pm on Wed last week. Some friends showed up with pizza while I was sparging, so between the hop weighing, socialising, eating and inevitable drinking (they brought LCPA with them  ) I forgot about getting the tube onto the tap until the end of the boil, at which point my wort was starting to cool and waiting to go into the cube. Needless to say, frustration ensued as I wrestled with it for a good few minutes past the 10 which I was allowing for the trub to settle... my girlfriend's last words to me that night were something like "you're starting to scare the shit out of me, so I'm going to bed"!

On another topic:
My efficiency as calculated by Beersmith was based on whatever ingredients I could find in there that seemed closest to the Weyermann malts the Doc's recipe called for. I've since downloaded all the datasheets from the Weyermann website and plugged the right numbers in, and my actual efficiency was a little lower - a touch over 80%. The 2nd batch, TL's SNPA, used Thomas Fawcett Maris Otter as a base malt. I've looked up the specs Here and cannot see anything that gives the potential extract. Is it possible to derive the extract potential from any of the numbers given on that page?

I've been playing with the potential extract value for the Maris Otter I've created in BS and my efficiency swings quite dramatically as a result of seemingly minor adjustments to the potential SG. I should probably just contact Craftbrewer and see if they can tell me. Should've asked when I was actually there

Should be able to find *most* info you're after here: http://www.beersmith.com/support.htm Scroll down to Beersmith Grain Extensions on the right.

Thanks, Bum. I was going to post the question "is there somewhere i can get Beersmith files with all these details in"... I guess the Beersmith website is the obvious place to look :)

However, it looks like they could be a bit out of date. Comparing the Weyermann file from that page with the datasheet from the Weyermann website, there are a few differences. Still, the details from last year's harvest (or whenever those specs were calculated) are better than no details at all. At the end of the day, we'll still be making beer!

@ Squirt,
Nothing ghetto about your setup mate, your milk crate is in much better nick than mine :)
Theres something more homely about doing it with milk crates and old bits here and there, rather than fresh stainless steel everywhere.

@ Matt,
I got a 20L urn on ebay, which has the element underneath, not in the fluid exposed.
I have had to disconnect one of the 2 elements to slow it down a bit, or it boils too fast.
Let me know if you want the details...

+1 to the milk crate brew stand. I have 4 in my system! If it aint broke why fix it? Especially when its an electric urn and you don't have to worry about burners and setting the whole lot alight.

Great thread and welcome to the club and obsession

Well, here it is, a glass of golden ale. 3 weeks in the bottle, and everyone that's tried it agrees it's pretty good. We'll just have to resist drinking it all too quickly!
Image

And my 2nd AG, Trough Lolly's SNPA, which is also the first batch I've ever kegged!
Image

They aren't actually the same colour - the camera doesn't do a great job of rendering the difference.

Well, I have to say, I've been smiling more or less constantly. drsmurto, Trough Lolly (where's TL gone, anyway?) I tip my hat to you, sirs; indeed, to all of the good folk of this forum, I say thank you for your sound guidance and continual inspiration. I think I'm getting a little teary here...
