The temptation of really tasty strong ale is almost overpowering
Don’t get me wrong with an imperial stout
As I have produced many good ones but
After that Anderson brew

A friend of mine dropped in to the workshop with 4kgs of fresh cherries and suggested that we do a brew with them
Which I immediately agreed on
Now the debate starts
Some have suggested doing a cherry porter
This to me would defeat the cherry contribution in the final wash
I suggested doing a lightly colored ale use the cherry in a depiped blanched mashed form put into the bottom of the fermenter whack in the wort add a ester yeast strain let it ferment out then add a brettanomyces and lactic culture and see what happens

I'd agree with the suggestion of a darker brew - I'd like that flavour sitting in the back of something more complex rather than being the main flavour. Something a bit chocolatey might be nice.

If you do go a lighter beer perhaps they might work in a wheatie.

As you say, you could always go a kriek if you have the patience.

Haven’t used those cherries as yet I did however cryovac and freeze them
We plan to brew tomorrow as It is a public holiday here in the west
Going to redo an old recipe that I put together in 2000
It is a black ale with a herb added to it as a background flavor enhancer

Will post on results when finished

a quick post i am about to leave home and go to the workshop to set up my system for tomorrows brew day
i was given about 130 Kgs of varieous malt to use but it has a weavel infestation
i will grind those little dudes into the grist and boil um up tmorra
look at it this way there will be more protein in the mash

back home after setting up brew rig
must report on weavel activity
opened four 25 Kg bags of malt two from cryer two from weyermann
damn those pesky mothers most of the grain looked like swiss cheese freakin holes every where
managed to save some for tomorrows brew
combineation of ale and bo german pils malt
crystal chocalate and black
plus fennel
man talk about liquorice
this is one of my signature brews

kegged 200 liters of this on saturday
it is a really nice session brew
i ommitted the black malt and flaked barley from the ingredients list this time and after tasting i feel that i was lacking a bit of boby and colour
head retension is good and clarity no issue
will enter into perth show an see if it medals again
