Floor Malted Grains

Postby warra48 » Wednesday Sep 03, 2008 4:41 pm

The topic of floor malted Maris Otter and Golden Promise etc has cropped in a few threads recently, particularly on English Ales.

I've done a search, but can't find anything on this or other forums to give me details of:
1. the difference between floor malting and normal malting
2. why it is considered necessary for some ales
3. what is better about it compared to normal malted barley.

Anyone have answers?

I was reading this a few weeks ago,

http://www.specialtymalts.com/maltster/ ... _prod.html
"The net result in floor malting is that malt modification (S/T) is typically lower and is more uniform."

It pretty much doesnt exist anymore. It is an outdated approach which requires too many man hours to be commercialy viable. If you are able to find true floor malted grains you will end up paying a hefty price for them!

1. The difference is that you get a grain which is generally less modified but more uniform in modification and perhaps has a bit better flavour.
2. It is not really considered necessary, just desired. Some people believe it imparts a more malty/nutty flavour to the beer.
3. Honestly I have not used it myself so I can not comment on the quality of the malt, but I think if I had to pay too much more for it I wouldn't bother!
Prost and happy brewing!

At the risk of sounding like a commercial for Ross, if you want to make a top notch English Pale Ale, you should seriously consider buying some floor malted Marris Otter. I have a 25kg bag of the Bairds Marris Otter - direct from the Scottish Highlands - in the corner of my cellar for that very reason!! You gotta love club bulk buys...! :D

Cheers,

50kg of MO? I'm impressed!
My MO is nestled between 2 x 25kg bags of BB Pale and 1 x 25kg bag of Weyermann Pils (er, so that's 100kg in bags!!) 8) The rest of the grains are in a cupboard in their own sealed containers - no idea how much but enough for specialty grains for the next year or so!

Anyway, enough of this tomfoolery - Ross has probably got several pallet loads of grains so we're all nano brewers compared to him!

Cheers,
TL

TL, i assume you have something other than the normal Bairds MO? How is it marked differently on the bag to the regular MO we get in Oz?

Will be buying a bag or 2 from Ross when they arrive.

G'day T/L

Bought a bag of M/O on Friday same as your pic not cheap at 95 bucks. Brewed an English ale yesterday, must say the aromas coming from the mash tun were beautifull as a very pronounced rich malt aroma. Looking forward to drinking this one, if I can keep my hands off it for the next four/five weeks. I put a scottish joke in the joke section seeing scottish malt is the flavour of the month.
