Beer Batter + Sauce

* 1 cup of plain flour
* A pinch of salt
* 60gms of melted butter
* 2 eggs, lightly beaten
* 1 cup of beer (not light beer)
* 1 egg white, stiffly beaten
* Extra flour as needed

Method

Stir flour through butter and eggs. Gradually add beer and stir until smooth. Cover and stand for one hour in a warm place. Just before using, fold in the egg white & mix thoroughly. Flour fish and coat with batter. Cook in 5mms of hot oil for two to four minutes on each side. A tip on flouring fish is to add flour to a plastic freezer bag drop the fish in & just shake it around this lightly coats the whole piece of fish evenly.

Beer sauce for fish
Ingredients

* 1 cup mayonnaise
* 1/4 cup tomato sauce with a good dash of Tabasco & Worcestershire sauce added
* 1/2 cup beer
* 1 teaspn prepared mustard
* 1 teaspn lemon juice
* 1 teaspn prepared horseradish

Method

Combine all ingredients. Chill and serve with fish. Makes 1-1/2 cups.

Try stout in the batter, you will be very surprised ;)

Other way, Try 50/50 cornflour and plain flour mix with stout, it will be little bit similar to Japanese Tempura Batter mix apart from the stout, while they use Soda water. ;)
