roasted some lamb shanks the other day

in deepish baking dish, not covered, and turn shanks every 30 mins

heaps of mint as a base
1 cup home brew, any type
1 cup coke
1 cup stock
pepper/salt on shanks
2 largeonions, 6-7 garlic cloves - that have been fryed a little

then after about 2.5 hours at 200deg

2 potatoes
few celery sticks
2 carrots
these have been cubed to about 1.5 cm

fry in a little butter till ever so slightly cooked

add to shanks and cook for another hour or so

lamb should be really soft and falling off bone

and potato etc should be cooked through and falling apart.

eat with cous cous, and of course BEER
pilsner is the love of my life...
