K.os' Chicken and Barley

This tasty dish was given by K.os in a discussion regarding "food and arcade games" on the alt.games.mame newsgroup some years back. For 3) I normally just use 3 cups of hot water and 4 maggie stock cubes. Here's what K.os wrote:

An easy, healthy and tasty recipe, which requires little preparation and is
done in about 1 hour of baking.

0) Pre-heat the oven to 190 C

1) Take 3-5 Chicken thighs and remove the skin and fat. Season with salt
and pepper, chili pepper powder, and a bit of basil.

2) Cut up some mushrooms, zucchinis, onions, garlic.

3) In an oven dish (pyrex is nice), mix the cut-up veggies, a cup of pearl
barley, three cups of broth (you can use canned concentrated broth, in
which case just put in the can of concentrate and one can of water), a
tablespoon of balsamic vinegar (or wine vinegar if you don't have
balsamic), and 2 tablespoons of butter.

4) Mix the veggies, barley, vinegar and butter, season with salt, pepper,
chilli pepper powder and herbs.

5) Put the chicken thighs on top of the veggie/barley mixture, and put it
all in the oven.

6) Bake at 190 C for about 1 hour. After 1 hour, remove the chicken and check
the barley. If there still is a lot of broth, give it a stir and put it
back (with the chicken on top) for about 10-20 mins and check again.

7) Serve the chicken with a nice pile of barley with veggies, and a good
beer. I recommend McAuslan St-Ambroise Ale, but it might not be available
everywhere.

You can also buy Pearl Barley in the Supermarkets (Coles or Woolies.)

yeah, not quite the same bizier :P

Pearl barley is dehusked and polished.. you'd probably find it with the "soup mix" sort of things - you know, split peas, lentils, etc.
