Its been a bit quiet around here lately. Glad you're finding some good info, there's plenty here.

Bottled my first belgian ale yesterday, tastes quite good from the fermenter. Looking forward to tasting it once its had some time in the bottle.

Ta guys. Earle, with the Belgian Ale does it have to sit in the bottle for 12 weeks plus like a Coopers Euro Lager?

It was 4 weeks in the fermenter @ 20C. I'll probably start sneaking a bottle just to have a taste in a few weeks time but being at 6.5% I expect it won't be at its best for at least a few months. I've got a bit of stock built up at the moment (300+ stubbies) and its really only me who drinks it, so I'm in no rush.

I don't know, sometimes it would be nice to know someone local with an interest in beer. I've given up on trying to get my friends to try my brews because invariably I get a 'that tastes strong' comment (even if its only a midstrength brew) after which they return to drinking their bland megaswill. If we have Friday afternoon drinks here at work the other guys put their beers in the freezer to give it "extra bite" which to me means they don't like the taste and they need to near-freeze it so they don't have to taste it. I try to politely decline when they ask me if I would like my beer put in the freezer.

You know,
even after years of brewing I still don't like beers that taste like "home brew".
Probably one reason why I like to serve mine near zero Deg (my Engel is actually set at -1 deg) to tone down any yeasty flavours.

That's not to say that I like all megaswills either, Since getting used to my beers I do find some comercial beers to be just too bland.

Serving temp of beer definitely is a personal preference. Lets not get DocS started. (Although he hasn't been here or AHB much lately.)

These guys are putting Pure Blondes in the freezer though. Thats their preference but to my mind they might as well be drinking soda water.

Pure Blonde is just the alcoholic version of soda water, minus the 'calories'

Hi fellow brewers, I've been a member here for 2 months now and I sincerely wish to thank you guys and this site for the help, info, and laughs. I'm now producing far better brews, understand more and have ventured out on what I do to my brews. What's also really great about this site is that well experienced
, knowledgeable brewers will come to the aid of the first timer. Great stuff.
