I finally bottled something I'm happy with (in fact, pretty bloody proud of) on Sat: a robust porter. SWMBO (always the harshest critic) preferred mine in a blind side-by-side test with James Squire porter (not a great porter, I know), so the decision was made that I had a beer worthy of being a prize. Sonny will be getting a bottle too, at last - 11 weeks after the draw
It had reasonably lengthy primary and secondaries, was filtered before bottling and used the notoriously lazy WY1187 Ringwood yeast, so hopefully it will carbonate eventually. I implore you, Jeff (and Sonny), to wait as long as you can to give it a chance. Those assertive flavours (as delicious as they are now) may mature nicely along the way too.
