Me too, just put down a hoppy pale ale last Sunday. Will probably make a ginger beer this weekend.

Yes mate!

Fired up a Yeast starter this arve with WP-01 for another Pale Ale tomorrow.

Simple Grain bill:-
4Kg Joe White pils Malt.
1/2kg Flaked Maize.
1/2 kg Wheat Malt.

30Gr PoR Flowers for 60 mins. (would normally use Galaxy Flowers)
30gr Amarillo pellets for 5 mins.

14 to 21 day ferment (depending on when I get time) at 18 degrees.
Rack & filter.
Cold condition for as long as it takes me to empty another Keg.
Filter into Keg & bottle any excess.

Lawnmower/session beer! :D

Regular recipe.

In the next few days, yes. 5 packs of WY1026 cask ale for a large batch of RIS. Smacked, will make a starter tomorrow.

Plan is to leave them be till November/December. Last year i wasn't as organised so the beers only spent 6 months in barrel. Aiming for 8-9 months this time.

Almost 3 months since I last brewed, so it was time to get into the garage and get back into it.

Odd ball brew, made up the recipe on the fly with what I had on hand. Probably closest to an American Wheat of sorts. It'll be beer, and it'll drink well, so who cares about styles?

2000 gr dark wheat weyermann
1240 gr golden promise floor malted thomas fawcett
760 gr premium pilsner weyermann
200 gr carabohemian weyermann

10 gr MHB bittering hops 60 min
20 gr cascade 10 min
15 gr galaxy flameout

Yeast nutrient and BrewBrite.

No water treatment, except it came from my kitchen tap filter.

WLP001 starter

21 litres OG 1.055 IBU 24

Wheat milled seperately first, then added to other grains and all milled together again.

100 min mash, 90 min boil

I dusted off the Braumeister yesterday and brewed an American Brown Ale with cascade and citra.

it was a fun day, I may do it again sometime :lol:

Brewed again yesterday.
Been trying to clone Innis & Gunn's wood aged Scottish beer.
First time I think I got the grain bill about right but didn't oak it long enough.
This time, fingers crossed I'll get it right.

It's been a while since I posted on here, but let's give it a shot.

I rarely brew lagers, but have decided to take on the challenge.

Put this one down a week ago today. Grew up a 2½ litre starter of WY2124, saved about 80% of it, and grew up another 2½ litres with the other 20%. Reckon I have about the equivalent of 4 to 5 smakpaks of yeast. I believe Pils need to have lots of yeast, underpitching leads to a less than satisfactory outcome.

Bohemian Pils. Well, I don't know if it's truly to style or closer to a Dark Lager, but it will be what it is. It's not a competition beer.
2400 gr Premium Pils Weyermann
2400 gr Bohemian Dark Floor Malted Wyermann
100 gr CaraBohemian
Tettnang to 41 IBU at 60 minutes
Tettnang to 4 IBU at 10 minutes

Stepmash, 63ºC for 60 minutes, 68ºC for 30 minutes, 90 minute boil.
90 seconds pure oxygen injection.
Fermenting at 10ºC for the last week, just now allowing it to free rise to 18ºC for a diacetyl rest (should not be needed given the amount of yeast pitched, but it won't hurt). Will slowly drop temp again in stages after the next couple of days.

Should be ready for drinking through December.

Next brew will be a Dunkelweizen, to be served at Bitter & Twisted Festival in the Maitland Old Gaol in November.
