woolworths have cans of cooper's bitter on special at $5.99. bought a few on the weekend but they expire in march this year..probally why they are cheap but some hops and some fresh malt should make them ok.

They will be fine. You'll probably find that the finished beer is a bit darker than if it was fresh, but the taste and aroma should be the same.
But I'd be buying a new yeast (saflager/safale) from the homebrew shop and use it instead of the yeast that comes with the cans, which is probably at or past its useful life.
Or make a yeast starter from a Cooper's Pale Ale, Sparkling Ale, Dark Ale or Stout.
