Honey in beer?

Has anyone used honey in a brew? I was thinking of using some but was unsure how much. Have got a Black Rock Whispering Wheat can and Hersbrucker Hops. Any suggestions?

Try half kilo of leatherwood honey and a 1kg bag of bodybrew.

Golden Syrup

I've just bottled an Irish style beer made from a Coopers Draught kit with an extra 200 grams of golden Syrup. In my fermenter at the moment is a Coopers Canadian Blonde with 300 grams of light (strawberry) honey. Will advise re success

I will try 375gms of light honey as have got that in cuppboard and a body brew to go with it. Thanks for the suggestions. Open to more.

Jeff I tried this brew(strawberry blonde) last year. It turned out quite sweet initially. I kept some for about 6 months and they are fantastic if you can wait that long!

Dogger,
Have not made stout yet, getting all ingedients together and waiting for some cooler weather. But looking forward 2 it. I am only a basic brewer to date so stout will be first to add other than kit.

The hooha man,

I usually get my honey from either an apiarist (unsure if that's spelt right) or the local markets where the bee people sell honey. I steer clear of supermarket honey 'cause its got chemicals or blended somehow to prevent it crystalising. When you buy from the bee guy you can usually taste or at least ask for the style of honey you want.

I'd start with a lighter tasting honey at first.

Hey Guys,

The hooha man,

I just normally use honey from supermarket.

How does every one else add the honey to the brew? I've read that you are meant to boil it and I've read that you don't need to boil it. I do boil it when l add it, but if others have just as much success with out boiling it l'll just add it with the malt.

Sorry guys,

In pure honey that you get from the suppermarket it is exactly that, pure honey. It is not allowed to be treated hence the big problem from China. Take a look at the blends of Honey if buying it from a big supplier. Ours used to Canada China, now it is Canada Argentina although I did see some Australian blends in the generic honey recently. Obviously if you are buying from a local it is exactly that, pure local honey. (it won't be blended with Canadian for example)

It is the flavours that come from the flowers that make it special.

i mainly buy organic honey (cant remember the brand off hand) from my local supermarket..

i don't boil it.. just chuck it in at the end of the boil & let it sit for 10mins. seems to work fine

But mostly the Beechworth type that I put in a wheat beer, but i over hopped that one with hallatau and its a bit too citrusy now.

Does honey give a tart taste?

I bulk primed my last brew with honey which was an IPA (with no wheat) and it has a tart taste!

i'm not too sure what type of honey the beechworth brand is.. but it leaves quite a strong taste doesn't it.. i don't know if i'd call it a tart taste. if anything i'd think the extra hops would help balance the taste out abit.
& "over hopping"? what's that :wink: ??

damn over hopping happened when i dry hopped before racking but lots 15 litres on the floor due to an open tap in the second fermenter. So all the extra hops got concentrated into 7 litres instead of 23 litres and it was pretty strong to begin with. 20g of hops on to of the original kit hops :wink:
