Loaf Stout

Post by fourstar »

Hey guys and Gals!

Old time brewer back in the game, stubled across the forum whilst getting my brain back into the swing of things and decided to join up!

thinking about my second brew since returning and considering a stout as the best option due to the cool winter months ahead.

How does this sound for a rich caramel brew? Filled to 22L

Malt Shovel Oatmeal Stout. (fit for 11.5L brews)
Muntons Export Stout.
DLME crystal 1kg.
Grain Chocolate Malt 500g.
Goldings 15g 60 min boil.
Goldings 10g flameout.
SAFale S-04.

Any additions or subractions? I want it to be a quaffer, is 22L ok? or should I drop to around 18L to make it really hearty? Should i go DDME instead of DLME? This brew will also be racked.

Open to any suggestions still around a bitter caramel stout! Hopefully my skills are still honed in and my recipe isnt off by a long shot!

Purchase will be made this weekend after I rack my current brew. Would like to get the the ball rolling on her ASAP! :P

It's not likely to be a quaffer with all those fermentables.

Your normal two can brew will be quite bitter, adding extra hops for a 60min boil will increase the bitterness further. Perhaps change your 60minute boil to 20minutes, which will still add a little bitterness but will give you more flavour.

I'm guessing that you'll be looking at a high 5% to 6% beer there, I would also cut down on the choc malt you don't need 500g, try 200g as beer drinker suggests.

I'd stick with the 22litres.

Cheers

Thanks AC, sounds good, remember the malt shovel is not a full concentrate, its only 1/2 (designed for a 11.5 L brew not 22L)

so essentially its built for a 33.5L brew, most stouts you reduce from 22 to 18L to add further depth so 22 i assume should be OK? has anyone else used 2 cans of oat stout that you know of? saying this do you still think it will be the "that" bitter?

I think i will need to check out what the typical O.G F.G readings are for the MSHB.

other that that im excited!

Two cans of MS will be around 1.040, but you are additionally adding 1kg of dry malt to one can of MS and the export stout, plus some choc grain, I'd expect you to have an OG around 1.055 (guess), for 22litres. If you decrease the water to 18l your OG will increase proportionally to about 1.064.
Thats a strong beer.
Regarding the bitterness, the export stout is bittered for 23litres, you are adding more bitterness from the MS can plus bittering hops, just go for the flavouring addition at 20mins, it will be ok.

Thanks for the help AC!

Went to the HBS today to pick up some hops for my current brew, had a chat to the attendant and he recently did a brew with the oatmeal said it came out great just with the kit and a different yeast. I did not realise until today that these 'all malt' MSB kits do no require any other adjuncts to start the brew. so if you were to add further adjuncts e.g 1kg Liquid ME to it you could top it up to a 22 L brew or do as i am doing and join 2 different kits with some grain.

so heres my revised brew. (again)

Malt Shovel Oatmeal Stout.
Muntons Irish Style Stout.
Grain Chocolate Malt 200g.
Liquorice extract 10ml.
Goldings 15g 60 min boil.
Goldings 10g flameout.
SAFale S-04.

Sounding good? 5.9% approx Alc Vol 22L brew. Should round it down to a 18-20L brew. will decide on the day! this will probably throw it up to around a 7%, is that correct?
