Cascade Draught??

Hey fellow brewers.
i have only done a couple of brews but it is terrific fun.
I have got a cascade draught can and i was wondering if anyone has
a)used it?
b) thought it was good?
c)had any cool recipes to try?

Hi Fozzy,

I'm not a whole lot more advanced than you, but hang out here long enough and you will learn a real lot, real quick. To answer your questions-

a) no
b) not applicable
c) some basic ideas to get you started

Go back to the Home Brew Shop and purchase 1Kg of Light Dry Malt Extract, some hop pellets (I suggest Cascade or Willamette) about 20 grams, and a packet of yeast (Safale US-05).

Boil the kettle. Put a cup of hot water in a bowl. Add enough cold water so the temp is about 25 degrees C. (About a cup and a half) Mix the yeast in there with about a tablespoon of Light Dry Malt Extract. Cover with cling wrap. After about 20 minutes it will start getting frothy and bubbly which is good.

Put some water on the boil, say 5 litres, and put your LDME into it. Give it a stir and boil for 15-20 minutes. (keep an eye on it as boil overs are sticky and messy) Turn the flame off. Add your can of kit draught and 20 grams of hop pellets. Throw this into your sterilized fermenter, and top up with cold tap water to 23 litres. The temp should now be about 25 degrees.

As long as the temp is less than 30 degrees you can throw in your yeast, seal up. Relax and have a beer. :wink:

another question- what then is draught beer as opposed to lager, pilsner, old etc etc? :? i had a squiz in beer types but it wasn't there.
beer types are as bad as music genres man.

I think draught beer was originally a draught of beer drawn from a keg. So draught beer is supposed to be like keg beer. Its a bit vague I know.

i'd advise against putting the yeast into a cup with some malt and water. aside from the arguments that the dry yeast comes pre-packaged with the nutrients it needs to get going already, it's pretty unneccessary unless you're making a very big beer, and it adds another possible entry point for infection.

hmmm,
i have not put yeast in a cup before and i have fermented other brews ok.
others swear by it. it would make the process of brewing slightly more exciting perhaps.

G'Day Fozzman,

I did the cascade draught can (i assume the spicy draught can) a fair while ago, adding a lot more wheat malt and brew enhancers, making it a bit more of a wheat, and less of a draught.
Results were good for that time, but I personally don't rate the cascade cans much.

mobydick was right in suggesting extra hops and another yeast, because the kit stuff from cascade is particularly bad.

Yeah making a yeast starter with dried yeast is controversial. But I got it off Palmers site, so I've just done it that way, and it works. I guess it verifies your yeast is hunky dory before you pitch it. btw if you make a starter with T-58 yeast it goes off like a toilet on a Taiwanese prawn trawler! :shock:

i was thinking of trying the yeast starter because i read it reduces chance of infection in the beer through the yeast using up sugar quickly-preventing bacteria growing.
what grains might work? i just cracked my second brew tonight which was a dry lager concentrate with dark malt/dextrose/maltodextrin mixture (unsure of exacts) and choc grain. it was beautiful. smoky, reminding me of tooheys old. it was my first brew with grains and hops and i am a convert i think.

Fozzman, some light crystal malt will add an extra dimension to your brew. Make sure you ask the HBS to crush it for you.
