LCPA clone - 1st in class and Best in Show 2007 Gawler Show 8)

1 can Grumpys 25IBU
1.7 kg Grumpys Pale Malt Extract
250g JW caramalt (50 EBC) steeped
15 g Cluster pellets @ 15 mins
15 g Chinook pellets @ 15 mins
5 g Cascade pellets @ 15 mins (why, i dont know, i just did)
US56 yeast
15g cascade dry hopped at rack

The morgans in the original recipe is 28 IBU but by swapping the chinook and cascade around i am adding another 5-6 IBUs anyway. Maybe use a coopers lager/draught (22 IBU). Use any tin of pale malt extract.

The ginger beer scored a 2nd in class - criticisms were that it lacked ginger bite and was too thin.

1kg of fresh ginger
2kg raw sugar
3 lemons
250g lactose
8 cloves
1 cinnamon stick
champagne yeast
23L

I have a more recent version that uses 50% more ginger and it was old ginger (left in the fridge for > 1 month which makes it more potent) and its got the real kick that i was after so i suggest upping the ginger to 1.5kg for this recipe. My next experiment will be subbing half the raw sugar for LDME and adding 250g of light crystal malt for some added sweetness. This one is a work in progress but its on its way. The recipe above will give you an alcoholic ginger lemonade type drink thats very dry but very refreshing and not being malty you can drink it like water!

The dark ale that came 3rd in its class. It must have been very close to winning since it scored 43.5/50 and the LCPA clone scored 45/50 and was the highest scoring beer.

I dont name my beers much anymore, but was listening to a bit of megadeth at the time so this one got named - Prince of Darkness Ale

1 tin Lager (i used a blackrock tin cos it was laying around - sub with any)
1 kg LDME
200 g choc malt
50 g black patent
250 g light crystal
250 g dark crystal
15 g POR @ 30 mins
20 g Fuggles @ 15 mins
20 g Fuggles @ flameout
Safale S-04

Lots of choc malt so plenty of coffee/choc type flavours. Using the S-04 and leaving it in secondary for 2 weeks left a brilliantly clear beer. Gotta love the way S-04 sticks to the bottom of the fermenter like shit to a blanket!

Enjoy. but like me, experiment, tweak and adjust them. Its what i do, borrow recipes from here and then try out slight changes and see what works.

My AG equipment is ready to be picked up so am doing my 1st AG on Saturday - will be an LCPA clone again and after the success with the kit version i will be starting off with a very similar version subbing the malt extract for pale malt and bittering with NB.

I am trying to perfect the JSGA at the moment.......I have a good idea for an all extract, but will test before posting.

I'm having a crack at an all grain of this, what was the overall IBU of yours? 30?

Boonie - keep your eye out for regional shows or even the Canbeera show if there is one. The Gawler Show is quite big and there were 80 beers entered. Also, since it was my first time i thought it was ok to enter at $1.50 per beer whereas the nationals are $5 a throw and not something i would do when my main reason for entering was to get feedback.

You could always send me some of your beer and i would be happy to critique it for ya! :lol: :lol:

All the 15 mins hops are added at the same time? Bag? Not likely. Dump them into the pot and then pour them into the fermenter through a mesh strainer i 'borrowed' from the kitchen.....

As for the AG version - i am currently formulating a version to be done on Saturday - my 1st all grain. Aiming for around 40IBUs

Did a slight variation on this yesterday.....Homebrew shop closed and that's all I had :lol: . What you could call a cupboard cleaner.

1 Coopers Pale Ale Approx 23IBU
1 KG LDM Coopers
15 g Cluster pellets @ 15 mins
15 g Chinook pellets @ 15 mins
5 g Cascade pellets @ 15 mins
Total Boil of 14 Litres
Wheat Yeast (No US56-05 on hand)
15g cascade to be dry hopped at rack

'Tis the only day I have spare for a while, so I thought bugger it, it wont hurt. Was concerned with the Wheat Malt Yeast as this was for a Golden Ale Clone I was going to do, but I definitely did not have the ingredients ready for that..

Sorry mate, didnt see this earlier- the kit version i guessed was about 40IBU. The kit itself is 25, so with the others a total of 40IBus seems fair.

First AG in fermenter - smelt great, much easier than i thought it would be but could have been the relaxed approach i took. Did end up with 32L @ 1.044 instead of 25L @ 1.052 but you live and learn. Adjusted calcs so next one should go better. 64% efficiency - need to work on that but again, loads of areas i can improve and will.

with the Prince of Darkness Ale (thrash metal and beer go together so well) I have a few questions
do you have an approx IBU of the kit you used?
what was the boil size?
and also what did you fill the fermenter up to?

I have it in beersmith and its telling me 22 IBU, just checked the excel file i have of kit IBUs and its about 18IBU. The hop additions add 20IBU.

Boil size was approx 12L - extract plus water from steeping the grain. Add the kit at flameout. Topped up fermenter to 23L.

S-04 dropped out after 7 days, racked and left another 2 weeks and it was brilliantly clear.

umm....another question for you Dr S.
what was the alchol % of the dark one? i just plugged yoour recipe into beersmith and it came up at 3.78%.....this doesnt seem right although i might be doing something wrong i am new to beersmith.....

Beersmith tells me the same thing. I am guessing it isnt doing a good job of estimating the gravity contributions of the kit/extract. The actual OG measured was 1.048 and FG was 1.015 giving an abv of 4.3%.

fair enough, i guess you could tinker with the potential gravity of the extract/kits until it came good

i assume the SG calculator is better in beersmith than the one on the brewcraft website. i just tried your readings in it and it came up 5% ......bizzare

I am planning on putting the LCPA down this week. I have brewed the recipe Boonie posted and it was one of the best brews so far. This will be the first time I have used grain so I will have to do a search to work out what to do with it. I know there is a thread on here somewhere.
How long does the grain need to be steeped for this recipe?
