Three Floyds Dreadnaught IPA/Strong Ale

This recipe is changed every time I make it to suit whatever hops I have lying around, so don't worry if you don't get the exact amounts in at the right times. Experiment a bit and use whatever hops you like/have lying around.

6.00 kg Pale Liquid Extract (8.0 SRM) Extract 92.31 %
0.50 kg Caramel/Crystal Malt - 10L (10.0 SRM) Grain 7.69 %
15.00 gm Warrior [15.00 %] (60 min) Hops 35.0 IBU
20.00 gm Simcoe [13.00 %] (60 min) Hops 40.4 IBU
40.00 gm Cascade [5.50 %] (Dry Hop 3 days) Hops -
10.00 gm Centennial [10.00 %] (45 min) Hops 14.3 IBU
10.00 gm Centennial [10.00 %] (30 min) Hops 11.9 IBU
20.00 gm Cascade [5.50 %] (20 min) Hops 10.4 IBU
10.00 gm Centennial [10.00 %] (0 min) Hops -
1 Pkgs English Ale (White Labs #WLP002) Yeast-Ale

It is important to make a good healthy starter for this brew, there is a fair bit for the yeast to chew through!

I am working on a BIAB AG version which has additions outside the bag before adding the grain to the mash. The recipe is as follows:

8.00 kg Pale Malt (2 Row) US (2.0 SRM) Grain 94.12 %
0.50 kg Melanoiden Malt (20.0 SRM) Grain 5.88 %
7.50 gm Cascade [5.50 %] (90 min) (First Wort Hop) Hops 4.1 IBU
10.00 gm Pacific Gem [15.00 %] (90 min) (First Wort Hop) Hops 14.8 IBU
30.00 gm Amarillo Gold [8.50 %] (90 min) (First Wort Hop) Hops 25.1 IBU
10.00 gm Warrior [15.00 %] (90 min) (First Wort Hop) Hops 14.8 IBU
22.50 gm Cascade [5.50 %] (Dry Hop 3 days) Hops -
1 Pkgs English Ale (White Labs #WLP002) Yeast-Ale

Please note the AG version is experimental! It should also be alot higher on IBUs I think, but as I have never done the FWH with BIAB I wanted to start small and work my way up!

Yeah, this is part of the reason for switching the recipe to an AG with FWH additions, hopefully I can achieve the same brew with less hops (not to mention the savings on grain costs over all that extract!). The extract version is bloody good, but dear as to make! Still worth it IMHO.

1081 - 1024 but I noted some champagne yeast may have finished it off. But then again the hops put quite a few particles in the brew so that may account for it as well. I do recall a brew where the FG went up in the end but am not sure if it was this one or not.
