I would usually use Hallertau for this brew, but since it has a shockingly low AA this year, I would rather use something else. I thought Crystal may be alright? Any advice would be greatly appreciated!

Re: Hop Subbing - Dopplebock
you can pretty well use anything in this style, but i like to use Nelson sauvin, its character fits the style well.

Right, I never thought to use NS. I just did a Knappstein clone though. I do have some Newport, D Saaz, and EK Goldings open as well.Ross wrote:you can pretty well use anything in this style, but i like to use Nelson sauvin, its character fits the style well.

Crystal would work, or spalt, hersbrucker, perle, NB... as Ross said almost anything.

Re: Hop Subbing - Dopplebock
I ordered Crystal, wanted to keep it close to the noble German hop family. Description:
Pedigree A triploid variety developed from the German Hallertau aroma hop variety with primary contributions from Cascade, Brewer's Gold and Early Green
I must say Hallertau Aroma, Cascade, and BG are three of my fav hops, so this should be a real ripper!
