Producing good head?

Happy Monday Chaps,

Not to be rude, but like most lads I like a good head.

What gives beer its head? Does this differ between ales & lagers?

Bottle conditioning has just finished for my latest brew. The carbonation level is great, but it has little to no head (The fermentables were dextrose, malt & dried corn surup.)

What should be done to correct?

Check your glassware. Detergents are head killers like you wouldn't believe.

Try this:

Wash your glasses in a bi-carb/water solution. Then rinse of in hot water with a dash of vinegar and leave to air dry.

This is basically an alkaline wash with the vinegar stopping the reaction.

Even glasses from the pub are crystal clear after using this method, and the head retention is Brilliant. Not that I would know....
