The CanIrish Ale-Stout

Hello!

Newcomer to the forums and the site itself, rather like it here. Very good source of information... to the point where it can be considered dangerous. After learning what one can do with two cans of wort, I decided to take a flying leap.

I only had one packet of yeast, as the packet for the other can mysteriously vanished. Thus, I purchased a packet of Danstar Windsor. A random query regarding Hops found myself carrying home a free packet of Spagnol's Hallertau hops. Score.

So, in a fit of inspiration, I now have sitting in my dark room a barrel of brew, comprised of the following:

1 Can 'Canadian Adventure' Ale (cheap-o grocery store kit)
1 Can Munton's Irish Stout
1 Package yeast (Came with the Munton's.)
1 Package Danstar's 'Windsor' yeast
1 package Hallertau Hops pellets, crushed.

Bashed together in the regular fashion as-per kit instructions, but without the sucrose. What I got is a fair bit of global beer: Canadian Ale, Irish Stout, English Yeast, German Hops :D

Now, it's too late for me to ask for advice and such. I'd simply like to say hello to you folks, and see just what kind of reactions that recipe may earn, if any.

Sounds tasty to me! Only difference I would have made would be to leave out the kit yeast.

Currently racking the brew into a carboy for second fermentation. Got a good mouthful of the stuff whilst siphoning.

Mmmnn, nice and bitter.

Starting Gravity: 1.042
Current Gravity: 1.020

:shock: You used your mouth to start the syphon!? That's one of the biggest no-nos in brewing!

unless you use a vodka mouthwash first - and even then it's risky!

hopefully you haven't infected the beer.

Ha ha...reminds me of when I use to syphon petrol from my old mans car into my Fj .... :lol:

Every brew my brother and parents have done in the past, oh 17 years was siphoned with the mouth. They never had an infected batch, homnestly.

However, I don't do that for the aforementioned reason. I have a self-starting racking cane that does the trick nicely. I take a sip from what's leftover in the tube when it's all said and done :D

Anyways, it's been three weeks since bottling. My hydrometer seems to be completely wonky, since the reading after two weeks in the carboy was 1.025... which means that somehow, the beer gained MORE sugars, despite the continued fermentation in the carboy. I decided to pitch the freaking meter out and bottle the stuff anyways.

I've so far drank a good dozen of the bottles since. Oh MAN is it ever good. There's almost no head, which dissapointed me a fair bit, and the carbonation didn't seem to take as heavily as I wanted... but it tastes so good that I just don't -care-. Noseful of delicious hops, taste has a nice hoppiness to it, a little bit on the bitter side in a pleasent way.

It is pretty much what I was aiming for, being the ferocious hop head that I be...

Now, to plan another brew for when my bottles are free... with MORE hops and a bit of oak... *Mad scientist laugh*
