After brewing for ten so years I'm going to give racking another try, despite the fact in previous attempts I've ended up with the only infected beer I've had on two occassions after removing the Co2 head. I'm rethinking after reading a thread on this site that secondary conditioning has a greater impact when kegging, since I've progressed to kegs I thought it might be worth a second try, even know I believe that the extra week in the fermenter will age the beer just as well as a week in the keg with a Co2 blanket to reduce infection.
Thoughts???
Second can of worms: I'm currently brewing Boonie's LCPA @19C. I've racked today at day 6. HOW important is it to keep the brew at 19C afther the primary. I'm in Central Queensland and sit the fermenter in an iced tub to maintain temp.
I do realise that the cooler temp will improve clarity, but flavour???
ive got 2 on the go atm - was thinking of racking before the kegs but hey why bother risking the infection since ill be filtering to keg 2 after a day in keg 1 anyway right?

I'm leaving mine for at least 14 days, so I've racked after day 7. With lager yeasts I know the old cake can add odd flavours and that's was what I was worried would occur with the Safale US05.

A lager or ale yeast cake is not going to impart any off flavours in your beer even after 3 weeks....where does this miss information come from?!? Rack if you need the space or your fermenter back, otherwise leave the beer alone & let the yeast do its work
