General homebrew discussion, tips and help on kit and malt extract brewing, and talk about equipment. Queries on sourcing supplies and equipment should go in The Store.
I'm about to put down my first all extract on the weekend, thanks to a recipe from the good folk at Grain and Grape. Before this I'd only done K&K since getting a Coopers' kit for Xmas last year.
Anyway here's what I'm putting down:
3.5 kg LDME
200 g Crystal Malt, 80 g Wheat Malt, 20 g Roast Malt
27 g Northern Brewer hops (60 min)
10 g fuggle hops (15 min)
10 g fuggle hops (5 min)
10 g fuggle hops (0 min)
Safale US-05
23 litre volume.
I'm crapping myself at this new process, but as they say "never die wondering"

Looks like an Extra Special Bitter recipe, but with an American yeast.
Should keep it clean and allow the hops to shine.
The wheat malt will need to be mashed, if it just standard wheat malt.
Yes, its one of their Bitter recipes. The brew shop guy provided me with all the grains in the one sealed bag.

Are you doing a full boil or late extract addition? Are the hop amounts right for the boil volume and SG of your boil for the best hop utilisation?
The guy at the brew shop worked it all out for me based on the ingredients and bitterness required, and provided me with a sheet with all the data etc. The brew has an anticipated OG og 1.058. Total wort boiling time is 90 minutes (hops for 60).

Sorry, yes this is late extract addition. I reviewed the "parital boil/extract" thread to work out the malt to use for my 8L boiling. I then used beersmith to obtain a guideline to adjust the hops, and to keep the IBUs as per the sheet from Grain and Grape (which assumed a full boil).

Warra is right that the wheat malt should be added, best case scenario it does nothing, worst case it extracts starch and head destroying proteins.
If the reason for adding the wheat is to give better head retention I suggest you use some carawheat malt, per perhaps carapils.
I put this down yeserday, and the expected OG was right on the money at 1.059, and this morning it was bubbling away. I must say, it was a lot of fun doing this, with the extra processes involved, (i.e. boiling, the grain steeping, hop additions, ice bath etc...) - it wasn't as bad as I thought it might have been! I'll report back once its done.
Had a taste of this today, after just 2 weeks, and bloody nice - good head and carbonation and nice bitterness. Will now age so it realises its potential.
