G'day all was wondering if anyone had a recipe for a K & K Dunkel Weiss beer or something similar preferably a darker colour weissbier ?
Anyone ever done a recipe for one of these beers I'm keen to give it a shot if anyone has any hints ?
Cheers.
K & K Dunkel Weiss recipe ?
Re: K & K Dunkel Weiss recipe ?
Hi,
I would do something like this:
1 x Tin Coopers Wheat Kit
1 x 1.5kg Coopers Liquid Wheat Malt
100-200g Carawheat, steeped
Perhaps some Choc wheat if you can get it
Weizen Yeast (WB-06, Wyeast 3068 etc)
Cheers,
Tim

Re: K & K Dunkel Weiss recipe ?
Sounds good thanks Tim.
I wasn't sure what would actually add the darkness to this drop.
100-200g carawheat is ok that's grain I assume, steeping is that partially boiling and letting settle or simmering for awhile ?
Not sure on the Choc Wheat is that a liquid malt or a grain any particalar brand to recommend and how mush to use ?
Sorry for all the questions but I'd like to give this one a shot I've done a few normal Wheat kits using the Morgans Sheaf Wheat kits and was impressed with the flavours.
Would this Dunkel wheat beer be tasting very different to normal wheat beer ?
Thanks, have you brewed a Dunkel Wheat yourself any recipe to recommend ?

Re: K & K Dunkel Weiss recipe ?
It's a specialty grain so a quick crack and a 30 min steep in some 80 degree water should do it. Then remove the grain and boil it for a bit.
The choc wheat is a grain, not an extract.
Here's a link to first recipe I used: http://www.homebrewandbeer.com/forum/vi ... 85&p=70093
I think I ended up with 150g Crystal (although I would replace with carawheat) and 50g Choc malt (use choc wheat if you can find it). That one came out very nice.
I will taste different to normal weizens, but you will still get the tartness and the banana/clove flavours too if you use the correct yeast (correct yeast and good temp control are the key to brewing a good weizen IMO)
Cheers,
Tim
