Good to see I've sparked some conversation here!

To catch up:

Anna, it's a good point you make about when this started happening. I did make the switch from using Morgans kits as a base to Coopers about the same time. Morgans publish the bitterness (and colour) as how it will be in a 23l batch, so the the BeerSmith calcs were different.

To all the the people on the IBU train: Yes, I can see that maybe my beers are coming out with higher than planned IBU's but I LOVE bitter beer and high hop rates. But I don't love how these latest batches have turned out.

I'm going to pursue the infection path. I'm getting a new fermenter and some better no-rinse sanitser and see how that goes. I will be adjusting my calcs for Coopers based beers though in the future - my method seems to give different results to the accepted norm.

Leave your fermenter with a solution of sodium met between brews.

Leave the airlock in (filled)

I have had no problems since doing this.

Idophor for the bottles.
Don't re-invent the wheel, change the tyre..
